Pizza from Nice, with onions and anchovies: "Pissaladière pizza" - Zasy recipe from a French chef

I present this traditional recipe for pissaladière "pizza", shared by famous French chef Cyril Lignac.
Pissaladière, a speciality of Nice, is traditionally a preparation of onions stewed over a low heat, and "pissalat" (an anchovy paste).

Ingredients for 1 pissaladière :
1kg Cévennes sweet onions
10 anchovy fillets
1 sprig thyme
olive oil
Black olives
For the dough:
(I doubled the quantities in the video, to make a pizza on the side)
250g flour
1/2 sachet baker's yeast
125cl warm water
1 teaspoon sugar
1 tablespoon olive oil
