Jalebi Recipe
Ingredients:
1. 1 cup all-purpose flour (maida)
2. 2 tbsp corn flour
3. 1/2 cup yogurt
4. 1 tsp baking powder
5. 1/2 cup water (adjust consistency)
6. 1/2 tsp saffron (optional, for color)
7. 1/4 tsp cardamom powder
8. Ghee or oil (for frying)
For Sugar Syrup:
1. 1 1/2 cups sugar
2. 1 cup water
3. 1/4 tsp saffron (optional)
4. 1/2 tsp lemon juice
Instructions:
1. Prepare the Batter: In a mixing bowl whisk together flour corn flour baking powder and yogurt. Gradually add water to create a smooth lump-free batter with a flowing consistency. Let the batter ferment for 4-6 hours.
2. Prepare the Sugar Syrup: In a pan add sugar and water heat until the sugar dissolves and forms a one-string consistency. Add saffron and lemon juice then simmer on low heat while preparing jalebi.
3. Fry the Jalebis: Heat oil or ghee in a flat pan. Pour the batter into a piping bag or a squeeze bottle. Pipe spirals of batter into the hot oil and fry on medium heat until golden and crisp.
4. Soak in Syrup: Remove the fried jalebis and immediately dip them into the warm sugar syrup for about 1-2 minutes ensuring they absorb the syrup but remain crispy.
5. Serve: Serve hot with optional garnishing of saffron or crushed nut
