In Japan, it is cheaper than other parts and has been eaten by old to yung for many centuries. But I think what nakaochi and green onion was mixed up (named ネギトロ(negi-toro)) is more popular than the ordinary one.

I watch both your channels it's really awesome to see you guys collaborating I'm a budding home chef myself I've cooked for myself for about 15 years and I always think there's more to learn when I watch both your shows I learn so many new skills and stuff that I would never even thought of thank you guys both for all that you do and all the love you bring to cooking
instead of cutting the steaks, if you cut off the top triangle and then cut the rest into halves according to the pattern on the fish itself, you get the nice triangle portion for rolls and the bottom 2 'saku blocks' for nigiri and sashimi

@The Stranger its endangered but not. basically they arent in a massive threat of extinction however if current fishing levels continued they would eventually become fully endangered. the fishing of them is now being regulated to ensure they never actually become endangered. So they got the listing to be able to better regulate the fishing of them since it was going to be bad if it continued as it is. if they were truly endangered you couldnt go to a fish market and buy them. their price is much higher due to the more stringent control on what you can fish.
This reminds me of this place I went in NYC it is a Brazilian grill and there was this buffet of fruit and veggies and people would walk around offering a bunch of meat of different kinds, it makes me want to go back there so bad! 😋
