    I would recommend dumping the drained veggies in an ice bath. Uses a lot less water than running the tap for 5+ minutes and stops the cooking process instantly to prevent any overcooking.

      Flowing cold water is much, MUCH more effective at cooling that an ice bath. Think wind-chill factor, why a breeze feels so nice. The moving air is the same temperature, but it *feels* cooler because it is more effective drawing heat from the mass that it is moving around. Water works the same way.
      Now, if you were to agitate, stir, and mix the vegetables while they are in the ice bath, you would have the best solution of all.

    Another variation, after rinse in cool water, dry, toss lightly in olive oil, put on cookie sheet and broil on hi until light char/ caramelization on top - yum

    Just keep the water as it has vitamins in it ...use it as broth and use it in soup etc

    One major benefit is that you eat MORE vege this way than in raw salad. I love salad but the typical amount doesn't suffice your nutrition needs

    Steam cooking the best method to preserve the nutrition in vegetables, especially Broccoli, Carrot should not be boiled. it should be steam cooked to preserve its nutritious value.

      Boiling vegetables for a few minutes won't deplete the nutrients, but excessive boiling or steaming will.

      Because the people who dislike your video perfectly know that boiling vegetables means that you'll have to get rid of all the water that has, by now, so much nutrients and that is not smart at all!
      On the other hand, the "dislike folks" know very well that steaming vegetables is the smart yet basic solution for this problem 🤷🏻‍♂️

      Perhaps it would have been better to call it “How to boil vegetables the proper way”. Steaming, roasting, etc. have their own proper way and are great too...there’s never just one way to cook most foods. Bit rough to dislike a video just because you prefer another way.

    Im not a cook, but after you boil gevetables in water all the vitamines and minerals are in the water you just throw, so what your eating is just boiled fibers.

      That is incorrect. Only SOME of the vitamins are lost IF you boil them for A LONG TIME. Minerals are not really lost at all, since most minerals are not destroyed by heat and are not readily water soluble. So, cooking them quickly, like I did, you lose very little nutrients.

    and for the OTHER half of really smart people, its a video about boiling not steaming, you are not trying to help or give advice, you all just want to show everybody else how you know better. It's just a bunch of show offs. The video is perfect and demonstrates in a simple way how to cook vegetables. The title is not " how to cook vegetables the HEALTHIEST way possible" so stop posting the same stuff over and over. EVERYONE KNOWS that steaming keeps the vitamins, YES WE ALL GOT THIS INFORMATION WATCHING TV, EVERYONE SAYS THAT ALL THE TIME. it's not like you discovered a new planet or something. This video is perfect as it its.

    I suggest to make it steam and put inside the steamer according to their hardness...avoid not to lost some of vegetables nutrients.

    I just throw the cut veggies in a steamer... take the steamer basket off and put under running water, then throw a cup of lentils in the hot water and put it back on the heat... that way I take advantage of the hot water....

    A little tip for after cooking the veggies. What I do is I drain the veggies into the basket portion of a salad spinner. I fill the salad spinner container with water and ice cubes(optional). Insert the basket of veggies in the water for about 5 min. Dump the water out of the container, and then spin the veggies dry.

    What are the benefits if any of slow cooking vegetables in only a moderate amount of water and some cooking oil like rice bran for say about 10 minutes? Adding onions, garlic, chillies, cummin seeds etc. as required. Onions are supposed to be anti-acidic. Also, using a steam pressure cooker on low flame for 5-7 minutes of cooking after this?

      no matter how you cook..make sure you dont over cook. What I see is, lot of people over cook their vegetables. When you over cook your vegetables all the proteins and vitamins will get lost due to overheat. If you want your vegetables and food to be intact with its proteins and vitamins cook just enough to digest...do not make it too soft. Cook it such that its till crunchy and make sure its color is not changed much.

      @@sheiladeleonto Hi, you need a steamer basket either an Oriental style bamboo like many Chinese folks use. They have levels so you can stack them to cook/steam various foods or buy a stainless steel one you put into a pot with a little water, cover it for steam to build up and you can have your veggies as soft or firm as you like. Another way is using a metal colander in a pot of water. The important part is a somewhat tight lid to keep the steam in. Steam is very hot and cooks fast. Enjoy!

    I am a Bharatiya (Indian), we eat vegetables every day. And if my family sees me cooking vegetables in this way, then they will not like it because this way the vegetables will be delicious but many of their nutritional elements will be exhausted. Maybe not that much because you have not boiled them too much.
    Just fry them in any little regional oil then add 2-5 tbsp of water and cover it, sprinkle it with spices. Want to eat it with any type of bread then make it more spicy by adding gravy, garam masala, etc

    Wow! Was going to eat my veg with gravy and lots of sauces but cooked then sort of like you did and just ate them on their own because they were so tasty. Being vegan and not eaten animals for over 30 years, this is a god send. (Atheist by the way)

    I have seen chefs add a little olive oil to the water to make the vegetables a brighter green, what are your thoughts on that.

      Adding oils to the water will not affect or change vegetable color in any way. Temperature is what creates the color change.

    You said that the green vegetables turn bright green after a minute of cooking.

      If you like them firm, stop the cooking at 60 - 120 seconds. If you like them soft, you'll have to cook them longer.

    I just moved Off Grid and don’t have access to that much water for cooking them that way. I’ll stick to steaming them in a frying pan with a lid and with filtered water or stock if I have some handy. Cheers

      I think your way is fine, but I'm a little concerned that you're living off-grid and you don't have enough water to fill a pot for cooking. I would assume you've got some kind of grey-water system so nothing that goes down the drain is wasted.

    Rub your vegetables in oil and salt, put them in the oven with high heat. Give each piece some space while they're cooking

    Blanching is the only way to go, they are so crisp and maintain their texture. If you sautee them they get all mushy and lose their flavor.

    Great info. Thanks! Maybe you should run cold water down the sink while you pour the boiling water down the drain to avoid damaging any pvc fittings under the sink.

      Boiling water does not even come close to being hot enough to do any slight damage to PVC pipes. This is not an issue. Thanks for your comment.

      You really should just make a fresh batch of veggies whenever you want to eat them. It's so quick and easy! You should never have to freeze veggies. These will last in the fridge for a few days, and by that time, you can make a new batch.

    After boiling the vegetables n throwing the water how does the minerals n vitamin remain in the vegetables?
    It is very interesting for people who work to cook n freeze it .can you reply that Question please ?

      Because the cook time is so short, you are destroying very little vitamins. Minerals are not destroyed by heat. You probably lost the same amount of minerals by simply washing the vegetables in cold water - very minimal loss.

      This depends on how soft or crunchy you like them. So, to answer your question, you just have to experiment yourself to see how long it takes to make them the consistency that you like them.

      I think he said until the water starts boiling again. When you drop in the veggies, that brings the overall temperature down so the water stops boiling for a bit. When the water is boiling again that means the veggies are close to boiling water temperature, cooked!
