thats probably because they dumbed it down a whole lot and tried to stay as simple as possible with the whole "good and bad thing". basically we need both saturated and unsaturated fats to an extant but in some circumbstances (that are becomming more and more common with nowadays) saturated fats can be more harmful than unsaturated. they just chose to keep it less complex than the real world, like schools also do. im pretty tired that you have to go to alternative education to get real information, that isnt too distorted with simplicity.

Since saturated fats have no double bonds (thus no "kinks"), they can pack their fatty acid tails on top of each other more neatly and thus most of them are solids at room temp. However, the double bonds in unsaturated fats make "kinks" which interfere with the packing of fatty acid tails, thus most unsaturated fats are liquid at room temp.

This is misleading, while the presentation addresses good/ bad fats, it is never stated why a specific fat is unhealthy other than molecular shape. I would have liked to know why that specific molecular shape is bad vs just telling me don't eat it....

For your statement to be valid dropping carbs must be the only independent variable. The fact that you consciously made the decision to do so means you want to lose weight. Chances are when you want to lose weight you don't only change one thing in your diet. I don't know exactly what you did but the logical assumption is that dieting people would tend to exercise more and lean towards foods and ingredients that are "healthier": things with less calories, sodium, sugar, etc.

Carbs are great to control because while they are a great source of energy, they aren't needed the same way you need fats and protein. That doesn't mean you should drop carbs from your diet. Nowadays, people eat multiple times the amount of protein their body needs, way too much carbs and not enough healthy fats. Eating too much carbs, fat or protein still has consequences that come with it. I believe that, when it comes down to your overall health, a healthy balance is needed.
