Just finished making these muffins a couple of hrs ago. House smells gorgeous! Followed recipe exactly and they turned out DEEEELISH. A lovely flavour in the basic muffin and then the raisins, really lovely. Thank you very much for something different. I plan to do these again and try a little swirl of orange flavoured butter icing to make a very special cup cake. Fruit didn't sink at all.
I made these and they are delicious! The orange and cinnamon flavour comes through really well. I forgot to sprinkle the oats on top before putting them into the oven, but they are disappearing so quickly that I can make another batch tomorrow. Thank you Stephanie.

what I really appreciate is, that you bake your recipes twice and show the result at the beginning. The youtube-baker I know they just cut their videos that it seems they have done it before filming.
I've worked with wet drippy batters and found lots of clean-up involved. I think I'd put that batter back into one of the measuring cups you previously used and pour it into the muffin tin. I shall try your recipe. Thank you.
You can reduce some sugar but a certain amount of fat is necessary for moist muffins with the proper kind of texture. I know people strive for reducing fat but there are times when doing so is going to affect the finished product, and not in a good way. A dry muffin is not a good muffin.
I love your videos. Please, would you make some spanish recipes? Like: leche frita, huesos de santo, torrijas, orejas, pestiños, rosca gallega, buñuelos, tarta san marcos, mantecados, mazapán, turrón, bica, tarta de almendra, milhojas, palmeras de chocolate...
I get full fat organic yogurt at Aldi--my store carries both plain and vanilla--and I use it in a pinch as a sub for milk or buttermilk, adding water to thin it out. I've even used liquid coffee creamer a couple of times--but not the hazelnut one.

Typically the label on the buttermilk container will tell you how much to use. Not sure if the amount differs by brand, but the one I use says for 1 cup use 2 tablespoons of buttermilk powder.

One reason cakes sink during baking is because the oven temperature is too low. You could buy a free standing oven thermometer to double check your oven's calibration.
