I tried making pork steaks for the first time last night on a kamado grill. A little closer to the coals than with a Chudbox, but still a good result in the end. I used your method of dunking, worked like a champ! I'll definitely be making them again. Thanks for the fun video!

Pork Steaks have been a thing in St. Louis for many, many years. Glad to see other areas are getting on the bandwagon. I usually glaze with a maple Mustard sauce and finish/caramelize it on a hot grill. Maple Mustard Sauce is yellow mustard, maple Syrup, a healthy amount of black pepper, salt, and a bit of Pepsi to thin the sauce. Just brush it on over the hot grill. They end up sweet, tangy, and a little bit of heat.
Yeah Buddy. I’m happy to see them catching on as well. I’ve worked the pit at Super Smokers. They weren’t really on the menu, but we used to get some and experiment from time to time. I gotta say, for me, I like a relatively thin cut, dry-rubbed, and allowed to sit at room temp overnight. Then, right over some medium-heat charcoal.

I found cooking on my top racks better when I had a reverse flow, so two racks might be right. My Lang’s bottom rack was so close to the baffle that it sucked on the bottom rack.

I just cooked some big thick pork steaks on my drum smoker. No need to wrap. The fat stays nice and crispy and renders out. Wrapping it will just make it soggy. I love cooking pork steaks over direct heat like that.
My neighbor makes the sure shot Sid’s seasoning, and it’s his baby at that food plant. He probably love to do some sort of collaboration with you on your channel.

Pork steaks are my favorite to cook. Try adding some walkerswood jerk paste to the mop. My absolute favorite. Family requests them for holidays now.

I did not. I cooked them fully unwrapped. You can definitely wrap them earlier, and put them back on the grill for aure
