Spicy Omelette Salad Recipe (Laab Kai Jiew) ลาบไข่เจียว | Thai Recipes

  • An egg salad like you've never seen before! This omelette salad or "laab kai jiew" is something we made at home one day because we didn't have any meat ready, but eggs are always something we have in the fridge, so we tried something different and it turned out to be delicious! Laab is a salad from northeastern Thailand normally made of ground meat, but Thai omelette works really well instead of meat and it's very unique too! I lightened the salad a bit with some crunchy cucumber, and loaded it full of fresh herbs. Yummy, healthy, gluten-free (use fish sauce instead of oyster sauce) and so easy!

    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.

    Kai Jiew reminds me of my childhood when I would visit family in Thailand during the Summertime. Having this with steamed rice and real Sriracha (not the Huy Fong Brand) is true comfort food.

    Pai, I gotta say I genuinely and truly loveee your videos.     I live in thailand for over 20 yrs and have not seen this, going to try it, but I have seen something similar; laab Kai Dao (Fried egg Laab) also really good

    Yes, golden fried eggs are the best! As the regular fried eggs with the yolk. I am Hispanic and that is actually how we make ours as well. 🥰

    I tried this today but I didn't have a mortar so I used perilla seed powder and added cashew for the nutty flavour of rice powder. For some reason I thought the recipe called for spring onion instead of shallot >"< but it's still so great! It's hard to believe how something so simple could be so delicious. The mess up just gave me reason to try again soon. Thank you ^^

    In Viet cuisine we have a salted egg omelette like that too! I haven't gotten around to veganizing it yet but I definitely want to try making a vegan version! That toasted rice powder looks incredible, I've never seen it before!

      There are a couple egg substitutes that have become very convincing actually! The Vegan Egg (by Follow Your Heart) is pretty good, it's made with an algae that firms up like egg, and the Easy Egg from an Australian company is SUPER eggy! Both use black salt (aka kala namak) to give it that sulphuric, eggy flavour and it's pretty good!

      Use it to flavour desserts, mix it in some syrup and use it to drizzle over cakes for example. A little goes a long way otherwise your food smells like potpourri!

    Wow...I tried it and everything was going great until I tried to be like Pai and accidentally sent my omelette flying. I managed to salvage most of it, but I'll definitely stick with chopping it up next time lol.

      I'd pair it with something rich cuz this is rather light. So a curry perhaps.
