The first thing I did was to download the video....I really love your tutorial...
Initially I don't like doing hand bags because it drains me often when I'm sewing the conners of the gusset however I guess the outcome of my bags will be stunning hence forth

Removing 2centimeter and adding of 2centimeter, is it after you were able to get the pattern measurements as a flat bottom.then if you want to convert it to piece gusset you remove centimeter and add centimeter

Yea it's after getting the flat measurement. You shorten the length of the bottom piece by 2cm(both sides) then widen it by adding 2cm to both sides
