The correct spelling is "Symp". "Symp" would be someone you "Sympathize", "Simp" would be a "Simpleton", ie IDIOT. I mean, look at Disney's Marsupilami cartoon series. When Mars said "Maurice has become a Simp", he's referring to how much of a mindless gorilla he is to be hypnotized by Norman, who was playing Tarzan to have Maurice be his servant.
I too really liked how they used Bowser’s “love” for Peach as a way to start his rivalry with Mario. While also establishing that he’s a conqueror first, so when Peach says no he’ll still want to rule the world. He’d just rather rule it all with someone he believes is his true love.
Plus, his assumption that she’d be impressed by his world domination plans makes the audience share Peach’s disgust towards him. Which is why it was genius to show how Mario and Peach are just naturally developing their relationship: getting to know each other, working together and flirting a little.

I've never really been a fan of the term, "simp." Some people just use it as an excuse not to be nice to the opposite gender, and I think that's way too exaggerated for all the wrong reasons. I do think Bowser's way of making Peach want to marry him is not out of love but out of force and sacrifice, and I hate to say it, but that's real "simp" material. Now, in no way does this make Bowser a bad character in the movie, but it does highlight a real-world trap that some may fall into. I actually really liked Bowser's character in this movie, and Jack Black nailed the voice work for him. I really liked the references to Odyssey with his outfit and everything like that. I think this character trait should honestly be left behind after this movie. If this is carried onto the sequel, then Bowser will become less relatable and more predictable, in all the wrong ways.

I wouldn't call him a simp, more so just obsessed. He's in love in a very distant superficial sense. He thinks fulfilling his romantic dreams will make him happy, but he's too delusional to realize he's got it all wrong. The fact that he's willing to throw hands with Peach shows that in a way she's still his enemy subconsciously even if he doesn't acknowledge it, because really he's seeking happiness and pretty much anyone who gets in the way of that will be public enemy number one to him. I think the only reason Mario becomes such a focus for him is because he won Peach's affection, so even if it's not Mario's fault he can't get the girl he wants, he'll interpret it that way. But if he wasn't in the picture, I think he would straight annihilate everyone in the Mushroom Kingdom indiscriminately.
Bowser just falls into that 'it's the yokai that did it!' trap only instead blaming Mario of why he's not hitched with Peach yet because if he doesn't have him to blame he'll just have to accept she's not interested

It’s misguided love, more stalkery than anything. I’d go so far to say it’s lustful obsession more than anything else:
I think he is a bit of both. Also obsessed. I think he has feelings for her BUT the culture he hails from, how he was raised, and what is expected of him is TOTALLY different from Peach's, humans, or most anyone else's common standards. I think it's Koopa culture that's different.
It's a culture clash in my mind. To Koopas, sacrificing another or MANY others in someone's honor could be the ultimate form of love and may even be more of a ritual or even a Koopa religion, or just something you do at weddings, like tossing the bouquet, stepping on a glass, or jumping a broom, or the whole bride's garter bit. Stealing and bringing the spoils to their loves while bragging about it can be seen as an act of love and something Koopa ladies swoon over. Conquering is the ultimate show of strength and is something to show off to your cherished one for Koopa-kind. "Taking" the one you have your sights on over and over again could very well in that culture mean that you really care about that person because you want them closer to you no matter what. Bower's just befuddled that Peach isn't the one picking up on the hints or appreciate these obvious and ultimate displays of love from his culture.
I also think that Bowser hails from a warring kingdom where his dopey lovey dovey feelings are a bit of an anomaly, but he can't really show it, or show being too sad, or taking orders without being seen as weak or having someone see it as a time to challenge him. He always has to play the role of the big bad, the tough one, and the one who takes. The moment he doesn't, his people look at him funny. The one who destroys when something defies him because he has to. If he doesn't he's weak.
I think he's not like most Koopas underneath it all, but he still has to play the role of the brute, especially as a king and leader of Koopas. He's deeply unhappy with something in his life, or the culture he was born into, and tries to fill this void with all these kids, but it doesn't work. Thus, he knows Peach, or someone like Peach speaks to the gentler side in him, which caved to obsession. Peach is the one thing that probably takes a huge edge off life in the Darklands and reminds him that beauty, kindness, and gentleness exists. He sees a pretty, floofy pink princess who is absolutely adored and cherished by millions in her harmonious, bright kingdom due to the love from inside of her and he desperately wants a piece of that love and...uh...a piece of something else obviously, but that's besides the point. He feels if he brings the beacon of love home to stay, and merge his kingdom with the hope-kingdom, she'll fix everything unhappy in his life. Unfortunately, he's going about getting her love in the wrong way that would leave most people terrified or disgusted. He was also raised without hearing the word, "no."
Also, Peach is NOT bad to look at and for a conqueror king, the princess has a gem of a kingdom that would fit nicely in his pocket with the others from an economic standpoint. To him, he's got everything to gain with Peach and once he feels all hope is lost, he's got nothing to lose, willing to even take himself out and stop living if he couldn't have Peach.
Oh, and even when he's made small and locked up to sing in a birdcage, he still won't shut up about Peaches. He's probably hoping in vain she'll hear his song.
I'm not saying Bowser ain't evil or effed up, but he's got some layers going on that I hope the future movies express upon.

I think Bowser needs to get a Koopa queen who is extremely jealous and feels threatened by Princess Peach. A very headstrong and powerful woman who has the same energy and morality as Bowser and who absolutely hates Princess Peach because she views her as Bowser’s ex girlfriend whom he is still in love with! She and Bowser are absolutely in love, but Bowser is also in love with Peach while his wife is constantly pushing him to wage war against the Mushroom Kingdom.

Another point was when the loops general informed Bowser of Mario’s victory against Donkey Kong and achieving in getting the Kong army, Bowser’s first question was if Princess Peach was impressed, with no concern of the anything else

I would agree that bowser is definitely a simp and not a man in love because bowser shows no love and is a selfish turtle who just simps for peach because loves her and express his reasons why he really loves her but peach on the other hand has absolutely no love nor feelings towards bowser at all especially trying to sacrifice luigi cranky kong plus the other kongs for peach and peach needed the kongs to stop bowser so obviously she had to do what she can to destroy the wedding and thanks to the help of toad who put the ice flower in the bouquet. Bowser hates mario to his core because like you said he's pulling peach away from him but peach doesn't love bowser but she seems to like or undeniably have feelings for Mario when he helped convinced cranky kong when she needed the kongs help to defeat bowser, bowser got very jealous when he saw mario and peach talking on rainbow road and the way peach was talking to mario seemed somewhat flirting Mario or maybe not and when mario showed up to help peach destroy the wedding along with DK too who was saving his father plus the prisoners and peach touching mario tanooki suit and them holding hands got bowser tremendous angry to the point that he wants the kingdom destroyed if it wasn't for mario that prevent that from happening. While mario and peach relationship or them in love isn't confirmed but to me I think mario and peach in the movie are probably undeniably in love as there both loyal kind impatient unselfish to each other

But even in the games, ever since Super Mario World (bearing in mind that SMB2-JP is an AU version of SMB1, SMB2-NA has nothing to do with Bowser and SMB3 is a stage play based on SMB1) Bowser has been a simp for Peach.
Ever since SMB1, he hasn't once used his black magic on the people of the mushroom kingdom. Why? Because it would upset Pichi-hime.
Heck now that I think about it, Bowser hasn't even invaded the Mushroom Kingdom since SMB1. SMW was a lliason in Dino Land. SM64 was some private fun in Peach's house, Sunshine was a vacation together in the tropics and Galaxy + Odyssey are simple snatch and grabs.
The answer is no. A simp would waste his time and money for the benefit of the woman he’s trying to get with at the detriment of his own good. While he does use his resources to get Peaches attention, he does it for his own benefit over hers.

I detest the newly made up word "simp", just another "word" the internet made up despite the bevy of pre-existing slang words that are already there for use - mention being used in a heterophobic manner every time there is an attempt to get romantic with the opposite sex, which is just plain wrong and hypocritical ("love is love" is believe was the slogan, right?) - so I would use other words like "creep", a delusional madman, or as Peach described him: "…a lunatic. A psycho." But regardless, everything Bowser does in the movie is keeping it in character. Everything he does is within his characterization, he would torture anyone who poses as a romantic threat to him, he would delude himself into thinking Peach (who he acknowledges she hates him) would easily marry him faster than a Disney princess, he would indeed self-proclaim Peach to be his fiancee despite their relationship to be one-sided and non-existent, and only he would blame Mario for getting in the way.
Also, if Peach wrecking the wedding didn't get under Bowser's skin before, Mario causing a catastrophic crash back to Brooklyn certainly did.

Bowser is a conquerer but watered down because the franchise is for the general public. Otherwise, he would just conquer all the realms and just plow Peach out of pure lust until she likes it, or perish. He is like Genghis Khan, but family friendly.
Bowser isn't just a simp. He's more comparable to the yandere trope, someone who is loving and caring until their love, admiration and devotion become feisty and mentally destructive in nature through overprotectiveness, violence, brutality or all three combined. Except, remove the loving and caring part, as well as the devotion part, AND add that Bowser presumably was a psycho before ever being in love with Peach, and that sums up Bowser well.
To be specific, I see Bowser as a mix between shuuchaku-gata (obssession-based yandere) and touei-gata (projection-based yandere), with his belief that Peach could ever love him, despite the merciless carnage he consistently brings about towards everyone else. He projects his belief that Mario is standing in the way in the way that a typical fictional yandere would project their feelings of jealousy towards their love interest speaking with anyone of the opposite or same gender, even though it's ambiguous whether Mario has romantic feelings for Peach or not (I see it more as a casual friendship than love, unlike in the Mario games). And he thinks that the destruction of everything and everyone, outside of his own kingdom, is what Peach would want, when really it's what his own psychopathic mind wants.
By comparison, the Bowser in the games is more of a kanchigai-gata (the "wrong idea" type of yandere). Yes, he wants Mario out of the picture and has tried to kill Mario in a similar vein to how he does in the movie, but in the games, he has sometimes shown respect for Mario as a person, despite their rivalry. Bowser and Peach have even had some sweet (albeit, oftentimes begrudging) moments in the games, such as in Super Paper Mario. This is not at all the case in the movie: Bowser has no respect for Mario, and wants nothing more than Mario to be dead, so he can have Peach for himself. And this is not to mention how, also unlike in the games, Peach hasn't any shred of having feelings for Bowser, not even platonically. She described Bowser as a psycho, after all. I doubt the Peach in the games would use that to describe Bowser, by default. I mean, she might, considering how far he's gone at times and how often he has strayed away from the romance plotline like what we think movie Bowser does, but it's less likely.
