    향긋하고 달콤한 생 망고를 올린 망고 생크림 케이크를 만들었어요~
    윗면에 노랗게 흘린 글레이즈가 포인트가 되는 예쁜 케이크인 것 같아요~^^
    기본 케이크 시트와 생크림에 망고만 넣은 간단한 케이크라서 망고의 맛을 충분히 느낄 수 있어 좋았어요~
    케이크가 심플해서 장식을 다양하게 하셔도 좋을 것 같아요~~ 창의력 뿜뿜!!
    과일이 듬뿍 들어간 케이크는 언제나 향긋하고 맛있는 것 같아요~*^^*

    ▶재료
    달걀 190g
    설탕 130g
    물엿 13g
    바닐라익스트랙 3g
    박력분 120g
    녹인 무염버터 33g
    우유 53g
    따뜻한 망고퓌레 20g
    설탕 10g
    물엿 10g
    판젤라틴 1g
    생크림 10g
    화이트 초콜릿 25g
    휘핑한 생크림 (생크림 300g+설탕 30g)
    설탕시럽
    ▶레시피
    1. 뜨거운 물이 담긴 냄비에 달걀, 설탕, 물엿, 바닐라익스트랙이 담긴 볼을 올리고 저으며 온도를 40도까지 올린 뒤 냄비에서 내리고
    핸드믹서로 풍성한 아이보리색의 거품이날 때까지 휘핑한다.
    2. 박력분을 체 쳐 넣고 섞은 뒤 반죽을 녹인 버터와 우유에(50~60도) 조금 넣고 섞는다.
    3. 섞은 반죽을 본 반죽에 넣고 섞은 뒤 18cm 오븐 팬에 붓고 기포를 제거하고 170도 예열된 오븐에서 40분 정도 굽는다.
    식히고 윗면을 잘라내고 3장으로 자른 뒤 15cm 틀로 찍어 준비한다.
    4. 돌림판에 시트를 올리고 설탕시럽을 뿌리고 크림을 바른 뒤 망고를 올리고 크림을 바른다. 1번 더 반복한다.
    5. 마지막 시트를 올리고 윗면과 옆면에 크림을 매끄럽게 바른다.
    6. 살짝 데운 망고 퓌레에 설탕, 물엿을 넣고 섞고 찬물에 10분 정도 불린 판젤라틴을 넣고 섞은 뒤 생크림을 넣고 섞는다.
    7. 화이트 초콜릿을 넣고 섞고 체에 거른 뒤 케이크 윗면에 흘린다.
    8. 망고와 애플민트를 올려 장식한다.

    190g Egg
    130g Sugar
    13g Corn syrup
    3g Vanilla extract
    120g Cake flour
    33g Melted unsalted butter
    53g Milk
    20g Warm mango puree
    10g Sugar
    10g Corn syrup
    1g Gelatin sheet (or Powdered gelatin)
    10g Whipping cream
    25g White chocolate
    Whipped cream (300g whipping cream + 30g sugar)
    Sugar syrup

    시중에서 판젤라틴을 구입하기 어려워서 아마존에서 판젤라핀을 구매할 예정인데요 찾아보니깐 판젤라틴 종류가 다양한 거 같더라구요. 비슷한 제품으로 보이는데 bloom이라는 용어와 함께 각기 다른 숫자가 써져 있는 제품들이 너무 많아서 고르기가 어렵기도 하구 120 bloom ~ 230 bloom 이라고 기재 되어 있던데 뭘 의미하는 지 잘 모르겠어서요... bloom의 숫자가 낮은 걸 사야 하는 건가요 높은 걸 사야하나요? 그리고 bloom이 의미하는 게 정확하게 뭔가요?

    I just have to say it. You're amazing! The cakes are gorgeous. The atmosphere is relaxing as well. I love how everything is carefully color cordinated( the utensils, bowls, measuring spoons, towels exct) to give to the overall feel. Great job :)

      Its not seedless. You can hear as they're cutting the large slices. The knife is going against tyre seed. I'm Haitian so I've seen and eaten all types of mango and there is always a seed. Where they're the large S- shaped mango, small hairy mango, or the smaller S-shaped mango. I love mangos and here in Florida it's the season for them. I have 2-3 mangoes a day

    This can be converted into a wedding cake recipe: double the ingredients for the bottom tier, use what’s displayed in the video for the middle tier, and reduce the ingredients by half for the top tier!

    Please, I need your help "cooking tree"!
    First of all, is the tempering of the egg mixture necessary before whisking them, every time I will want to make this sponge cake?? What really does this process?
    Also, can i make the sponge cake a day ahead and put it in the fridge? I know this helps to cutting it easier than when it's fresh. Will this affect the taste or/and texture of it?
    I really want to make this cake for my husband on valentine's Day. I would appreciate it if you could take some time to respond.

    Can anyone tell me what is cake flour? Is it the same as all purpose flour? My mom's birthday is on June 1st so I'm thinking of making this for her birthday.

      Jiayi Chen nope. It’s not the same. Cake flour has less protein than all purpose flour. You can buy them in any grocery store.

      Cake flour is very simple to make at home. To 1 cup of all purpose flour remove 2 TBS and replace it with 2 TBS of cornstarch 🌽. Sift together 4-5 times and it is ready to be used. 👌👍

      Cake flour is flour that contains baking soda, baking powder and a pinch of salt.

      It’s not the same but you can use all purpose flour

    I have tried this but my whipped cream wasn’t stable at all. I live in the Caribbean and they sell whipped cream with 30%, and or 40% with fat. What brand whipping cream do you use?
