+TheRegalEagle2014 Both are really sweet. Masa is eaten more in the North while plantain mosa is eaten almost everywhere in Nigeria (I think I'm right with this).

I'm subscribing to this channel because of your profound English usage. Beyond no reasonable doubt an educated person like you is better of to disseminate the procedures for cooking Nigeria recipes than many others who confuses people with their English ability. One thing is to know how to cook, another thing is to know how to unveil the methods with the proper English usage. You have shown that ability in the video, which gives you the credit for not just knowing how to cook but also being able to get subscribers who will understand your English when you speak to subscribe to your channel. Nice..one.. "Abeg mek dem keep my own ooo... As u see me so, nah d food I wan chop." 5 Gboza!!!!! for you... Up 9ja..

hey chef lola i am new subscriber to your channel i love all your cook, i will want you to make kunu cause i love it but dont know how to do it. thank so much and keep it up.
MASA - SINASIR - WAINA - RICE CAKE! This is a video request from one of our food lovers Hajia Fatima. Let me know how you like to eat your Masa. th-cam.com/video/QWBc3q8wCL8/w-d-xo.html
hey chef lola! happy newyear i am a new subbie nd i ve watched almost all ur videos btwn yesterday&today. u re doing a gud job. pls can u add palm oil to this? cus i remember as a lil kid in kano we used to buy waina flour (what they called it) nd it was yellow like palmoil. nd also do u know if masa is same tin as gurasa? thanks
Happy new year lulu. Thanks for subscribing...I do know there are a couple of variations to making masa but I've not seen the one with palm Oil....the Gurasa I know is a form of flat bread tough it looks like masa on the outside but it's quite different in taste and texture. I hope this helps?
Hello ma'am the sinasir was nice was I feel mine got a little hard from the side but middle was soft but wasn't as fluffy as it should be, I added and soaked for 5 hours may be I will make again next week and keep it soaked over night and I also feel my yeast didn't rise we'll probably I didn't add proper sugar to the yeast so may be its one of the reasons but it wasn't watery rather it was fine which I was worrying for! I will make again next week and let u know. Thankyou ma'am 😘
sabrina nasir You are welcome dear, I am so happy you are almost there! with a little bit of more practice, you will be perfect at it! Thanks for the feedback and please let me know if there are other ways I could be of help. :D
Hi Khalia, sorry to hear that. You can simply reduce the proofing hours. The longer it proofs, the more it ferments. Alternatively, you can try this version, th-cam.com/video/gp0LSjRxIXw/w-d-xo.html you will not even notice any awkward taste in that. I hope that helps?
Hello ma'am thankhou for this recipe, I soaked the tuwo rice for almost 9 hours plus and when I was grinding it I feel it's not as clear paste like puff puff mixture has little coarse rice but it was creamy so I added a bit water I feel it might not be as thick as yours, I am now allowing it to proof but I am sorry to write so much and long want to know if in car after proofing the batter isn't as thick as yours shown in the video can I add little flour or corn flour to make a slight thick?? Just want to know may be next time I will add very less water.
yes sabrina nasir There will still be some very tiny grains inside you don't have to worry about that. Don't add corn flour it will ruin the mixture. An extra 7 tablespoons will make the masa mixture quite thin but it should still come out well. In case of next time, it's advisable to wait for the Masa to proof and check it's consistency before adding Water because Masa seem to get thinner on it's own after it's proofed but if yours feels thick you can at this point you can now add about a quarter of a Cup of Water. I hope that helps.
+Uju Tina Hi Uju I got mine at a local store in my area but it's also sold on Amazon. You can buy it as a set here: www.amazon.com/Ninja-Master-Prep-Professional-QB1004/dp/B004XK4N9C/ref=pd_sim_79_3?ie=UTF8&dpID=41-sQCCljxL&dpSrc=sims&preST=_AC_UL160_SR160%2C160_&refRID=0TXKC9E3KXBWJF002XGW and you can also buy it individually here: www.amazon.com/Ninja-NJ110GR-Express-Chop/dp/B00HL3TBDQ/ref=sr_1_1?ie=UTF8&qid=1456037125&sr=8-1&keywords=ninja+express+chop
james shindi Honestly James I haven't tried this personally, though I'm hoping to try it one of these days but I know people do use the gluten free Rice flour by blending all the ingredients together with the Rice Flour at once and all the other steps still remains the same. please let me know if it works out for you.
And ma'am one last question, in your website says a cup of water or less I think I added total of 7 table spoon water. Since it wasn't getting so nice paste I added may be a bit more so kindly advice me
sabrina nasir I believe your Masa should come out well if the extra Water you added is not too much because 7 tablespoons is a bit less than 1 cup of Water. It should be fine. Please I will like to know how it turned out once you are done. Cheers!
+Chef Lola's Kitchen thankyou ma'am I will fry after two hours and I will surely update you! I tried one and it was fluffy of course wasn't like yours! As u r best at it but still. Thankyou ma'am again. I am very new to all these. So I am finding it all exciting to learn all new Nigerian recipes
sabrina nasir Baking powder is optional but you can use 1 teaspoon for every 3 cups of dry rice if you choose to use it. Potash (akaun or Kaun) which is also optional can also be used in the same proportion as a substitute for Baking powder.I hope that helps?
+Chef Lola's Kitchen what I did I added one tea spoon baking powder as ur website and I didn't add much water and as I said the paste isn't like super fine like flour but still doable used the kitchen aid diamond and it is not bad but I will let u know. Are u on Instagram? Then I will show u the pictures with u. And I don't have Facebook else I could share there
sabrina nasir I am not so much into instagram right now but you can send the picture to my email address cheflola10@gmail.com and I will post it on my facebook page. :)
Paschal Onyemetu I will advise you add the yeast because it plays a vital role in the fermentation process. It makes the rice cake airy, gives it a good chewy texture and it also adds to the flavor. If you exclude the yeast all I mentioned will be missing from your Rice cake. I hope that helps?

Can ground rice be used?
+Chef Lola's Kitchen Can Basmati rice be used instead?
Yes you can. :)
plz about the 1cup of water stated in the description box,,was it used to blend the rice??
Yes Samira.
Hi Lola thanks so much for this lovely recipe, will try it and hope I get it perfect like yours. can I use basmati rice instead? thanks.
+Scilla Chielo Thanks dear...yes you can use Basmati.
+Chef Lola's Kitchen thanks a lot. God bless u so much. Will give it a try and will let u know how it went.
Yes ground Rice and what kind of measurements do I need?
+augusta barbieri sorry I'm yet to come up with the perfect measurement....still working on it.
U said to add baking soda but in d description box u wrote baking powder so am confused which to use
Quick question; instead of soaking the rice and then grinding, can you use rice flour?
james shindi Honestly James I haven't tried this personally, though I'm hoping to try it one of these days but I know people do use the gluten free Rice flour by blending all the ingredients together with the Rice Flour at once and all the other steps still remains the same. please let me know if it works out for you.

Yes sabrina nasir the baking powder made it fluffy which is perfectly o.k! Just curious where are you originally from?
Is it possible to use grandad rice?
+augusta barbieri Do you mean ground rice? Yes it's possible but you might need to use a different measurement.
Delicious.
Please can I use per boil rice?
I really can't say at the moment because I'm yet to try it with parboiled Rice.
+Chef Lola's Kitchen okay thank you
what rice is in the bigger bowl ?
+Sabrina Alleyne I have the soaked Rice in the bigger bowl and the boiled Rice n the smaller bowl.
Is it necessary to add baking powder and if I do what should be the amount please
sabrina nasir Baking powder is optional but you can use 1 teaspoon for every 3 cups of dry rice if you choose to use it. Potash (akaun or Kaun) which is also optional can also be used in the same proportion as a substitute for Baking powder.I hope that helps?

Can i make it without yeast?
Paschal Onyemetu I will advise you add the yeast because it plays a vital role in the fermentation process. It makes the rice cake airy, gives it a good chewy texture and it also adds to the flavor. If you exclude the yeast all I mentioned will be missing from your Rice cake. I hope that helps?
Hi, thanks for sharing the recipe. Can i use rice flour instead? would it work?
Hi nobledoctor , I'm yet to try this using rice flour but I know a couple of people that have tried it and they said it worked out. You can give it a try and kindly let us know how it turns out.
+Chef Lola's Kitchen, will sure do.
It can also be eaten with miyan Taushe
i tried it but it doesnt form in form of cake. it was scattering and look watering dat i couldnt turn it. what could it be.
I am sorry to hear this Amina. If the batter is too watery it will not turn out well. you can check my website here for a more detailed expatiation www.cheflola.com/nigerian-masa-recipe-hausa-masa/ AMINA USMAN
Chef Lola's Kitchen Thanks for sharing great video, can i use rice or corn flour?
Yes you can use Rice flour but I'm yet to try it with corn flour.
I will like to eat my masa with miyar taushe or honey
But why is my masa breaking after following all ur instructions and using ur recipe?
Isaac Gana Sorry Isaac I'm just seeing your comment. I guess your batter was too thin try reducing the amount of Water a little bit when next you try.
Pls make the yoruba mosa. Thanks
OMOTOLANI OGUNBANWO Thanks for requesting this recipe. It will be coming soon. Please stay tuned. Cheers!
Pls chef . What do people add to chin chin that makes it hard.
OMOTOLANI OGUNBANWO I really do't know the recipe you use for your chin chin but on a general note reducing or totally eliminating the use of eggs will result in a hard Chin chin. I hope that helps.
With hot spices
I made it but put too much yeast 😯the taste is kinda bitter
Sorry to hear that. Are you sure it came out bitter? Did you use the quantity of yeast stated in the recipe?
I LIKE TO EAT IT WITH CHOCOLATE (NUTELLA )!!!
