  • This chicken Hobo Meal is good simple eating. It will fill you up and satisfy your tastebuds without emptying your wallet. It is a good way to stretch your money and put dinner on the table fast with what you have in the kitchen. Shop sales, pinch your pennies and we'll get through this like our grandmothers did.

    3 to 8 ounces of Chicken or other meat
    1 Potato
    1 or 2 Carrots
    1/4 Onion
    1 to 2 tablespoons Butter or other fat

    My grandparents during the depression were known for giving meals to hobos. The hobos carved signs in trees along the railroad leading to their house that said they would give food. I would see those signs even in the 60's walking in the woods.

    Thanks for this recipe, Becky. My grandmother lived in St. Paul from the 1930s during the Depression, until the 1980s. Her house was just up the hill from the railroad tracks. Every once in a while, a man would come up from the trains and offer to do work for her, for a meal. She wouldn't have them do work for her, but she'd sit them on the back porch while she'd go up into her kitchen and make them a sandwich, cut them a piece of whatever dessert she had in the house, and give them a glass of milk. They'd sit out on the porch and eat, and they were grateful. She also had beautiful gardens. Don't know if anything was ever taken from them, but I don't suppose she would have minded that much if it had happened. Times were hard back then, and she had enough for herself and her family.

    My Scottish granny called this Kitchen Sink because you can add anything except the kitchen sink.
    Now I'm an elderly widow on my own I'll make enough to last several days. Have it fresh on day one. Add something else to slightly change the flavour for day 2 and any left goes the freezer for another time

It's good to remember those days, learning from 2 grandmothers i still make most of these foods, especially if I'm feeling kind of bad, physically or emotionally. I really appreciate your channel.     This reminded me so much of my Mom and my Little Grandma. They told stories of the Depression and since they were farm folk they had many people ask for any type of food. Lots of times they would work for a bit, they were grateful. My Little Grandma never turned anyone away. They got something! Farm food is what I grew up on. Meat, potatoes, vegetables, salad and usually some sliced bread. Much smaller portions than today is so true. And we were expected to be quiet and eat! Ha! We were a big family and if you talked it had to be nice. I was a reader so I was always sneaking a book to hide but always got found out! We were always trying to make each other laugh or get a sibling mad! Ha! That could eventually get you sent away from the dinner table! Love the memories, hope you have another book coming out, I enjoy yours immensely I got quite some time ago. God Bless Miss Becky. Thank you. ♥️🇺🇸

      I remember feeding the hobos...we lived close to rail tracks in small town in 1940 n they would cone to house n adk for food...mother would feed them in our screened back porch
      .they were always polite n we wished them well om their journey

    This reminds me of my moms rabbit stew,,the same
    ingredients. Dad got the rabbits (2) mom browned the meat in flour with the onions and boiled the carrots, then added them and potatoes,, cook them until the tatters was done. Salt and pepper where the only spices she added. Sometimes there where green beans, sometimes she would cook up a batch of greens to go with it. Add anything you want to. It would be enough for 6 people.

    Made this years ago for my kids who are grown now in their 50's and 60's. Their kids make these for their kids they love them they like putting the vegetables they like on their tin foil. I made them with hambuger patties. I seasoned them with what they liked. Marked then with marker so they would get the ones they helped make I cooked them in tin foil in the oven we had these many times for supper my son ate two of the tin foil packets. he was a big eater. We worked together and had fun. They would always say taste mine, mom. Like It was a different and special one.

      That is what my family did. This was something we made while camping. We used the ground beef patties, as well. Potatoes, onion, mushrooms, etc were added. So simple, but so delicious.
      I turned it into a casserole with ground beef that I make regularly. I toss in whatever veggies I have on hand.

    We make foil packs for the grill all the time. We use potatoes, onions, zucchini and yellow squash. For meat we use kabasa

      My parents did this in foil packets over the fire with ground beef patties. I loved them, so I now make it in a casserole form with ground beef. Delicious.

    Love your way of adding lemon & honey to chicken! It is SO delicious! I just gave your cookbook to a young lady who I'm getting to know at church. She has three kids who run to me for hugs every time they see me. Her husband just got a really good job, and I just feel God has blessed me to put this beautiful family into my life!🥰

    During the depression, when men were travelling from farm to farm, they would carve on a tree or whatever was there, in front of the farmhouse. They would carve symbols representing how they were treated. For example a pie 🥧 if you were fed good. An axe 🪓 if there was work available, even symbols if they were poorly treated to warn others to stay away. When I learned this I was fascinated.

    I made Knorr garlic and herb tonight, it's a good side. I love using Yukon gold potatoes though, they are easier to cook. And usually, the baby carrots are not expensive. I just have what I have right now. Thank you for the verse, I will memorize it. I have two verses memorized. Philippian's 4: 13, and Psalm whatever: "Be still and know I am God." I'm reading through Psalms right now in the women's ministry I'm in. Get YouVersion app on your phone. You can read and listen at the same time.

    Becky My Daddy taught me how to make this When I was about 13, And This was back in the early 70’s. My father was born in 1922. And We lived in the city. But our whole big fenced in backyard my parents raised a beautiful garden every year. But when they divorced I went with my Father. And I will never forget fixing this In the oven and crockpot. And making homemade biscuits were delicious dipped in the juice this meal makes.

    My grandfather worked for the railroad. Somehow, word got around the hobo community that people were welcome to join the family for a meal. It was a regular thing to have guests for dinner and my grandmother always prepared extra just for that purpose.

    This looks like something, Ms. Becky, I’d make in my crockpot! I cheated Sunday afternoon, since, it was a bit cool from where it had rained, I made something,I hadn’t had in awhile, which was, especially, salmon patties and, potato cakes with butter beans and, baked them in the oven and, I had enough leftovers to get me through most of the week and, thank God this way, I didn’t have to stand so, long, course, I have central air to so, that helped.     My grandpa was a hobo. He left home at 13 years old during the Great Depression, he said he was one less mouth for his mom to feed. He ended up in the San Joaquin Valley and he and my grandma farmed 20 acres. He was the best grandpa you could ask for.

I've not watched in a while cause I've been really sick. 3 months ago I had 2 Bladder Cancer surgeries, 2 days later a Heart Attack and the a Heart Cath and was in ICU cause a team of doctors couldn't stabilise my BP and due to all of my serious blockages and my age 79 and my health issues I'm not a good candidate for open heart surgery. I know that I'm only here because the Lord is with me. When I was still working I'd repeat Psalm 118:24...this is the day the Lord has made Let us rejoice and be glad.     My husband from rural Louisiana told me of a neighbor who would make a trail of chicken feed so his neighbor's chickens would come under his house. He had a floorboard he would lift up and snatch that chicken.

    I remember these type of ushers my mother made them there was 10 of use she had to stretch a meal I loved them I still eat there today but when I moved here closer to my brother he made it and called it Lucky pot your lucky if u get any 😂😂 but I use Misses Dash seasoning to monitor my blood pressure and loved it we would have it with a skillet of corn bread or biscuits yummy love you videos ❤

    Miss Becky, I love this recipe. My grandma made this on cookouts when I was 7-11. She rearly made it the same. She always added something different.

    One of my favorite cheap meals is lentil and rice casserole. It is cheap, easy filling and delicious.

    My mother and father lived close to a railroad track and during the depression they were besieged by hobos. My mother hated to think of a man going hungry and one day she had nothing in the house to spare except a few doughnuts that my father had managed to purchase. We didn't have doughnuts very often so it was a very special treat for us to have them but because my mother had nothing else to give, when a hobo showed up at her door one day she gave him about six doughnuts.
    She went back in the house and was watching him through a window and she saw him get out to the street and just throw all the doughnuts into a ditch. She knew that her children would have LOVED those doughnuts and that man just wasted them. She couldn't understand why he didn't simply tell her that he didn't like doughnuts or he had been given a lot of them recently and didn't want any more and she couldn't understand why he took them and just threw them away. I don't think she ever gave any food to any hobo after that day!
    I think you are absolutely correct that hobos often used chicken in their soup or stew because it was relatively easy for them to steal a chicken and also they could use the entire chicken in just two or three meals. I don't know what they would have done if they had stolen a pig! Besides the mess of butchering the hog they would have been left with a lot of meat that they couldn't use! This hobo stew actually looks really good.

    It's funny when I was a kid ground beef was cheaper than chicken. We never stole food, though.

      I got married in 1964. I remember during the time around then, hamburger was 3 pounds for a dollar.

    One thing that gets on my nerves is they inject so much liquid into the chicken that it makes it hard to brown it. I’ve been trying to get chicken at the small grocery stores with a butcher department where they package their own meat and the meat hasn’t been injected with the salt water. It browns better and cooks quicker. Anyway, I like to cook this kind of recipe. One pot or one pan meals can be adapted to whatever you have, and they are so delicious! Love your channel! Good country cooking is best!❤

    In case anyone is interested in learning more hobo history, there is a channel called Waypoint Survival in which there is a very interesting series James Bender has done on this. I learned there is a difference between a hobo (honest working man looking for work) and a tramp (bum), who would be far more likely to be a thief.
