🇫🇷 Provence's Best-Kept Secret: How to Make Carnival Fritters with Orange Blossom & Lemon Zest!

  • Mardi Gras is French for "Fat Tuesday", reflecting the practice of the last night of eating rich, fatty foods before the ritual Lenten sacrifices and fasting of the Lenten season a period of 47 days, before Easter.
    The "seven fat days" end in apotheosis with Mardi Gras and are an opportunity for collective release. The spirit of austerity, fasting and abstinence that is coming is momentarily put on hold with the carnival.
    In 2023, it will take place on Tuesday, February 21.
    Mardi Gras, popularly, is also the day when we eat carnival donuts, or fried fritters, sweet pastries cooked in oil.
    In Provence we eat Bugnes, Oreillettes or in the county of Nice, the famous Ganses de Nice, a unique recipe I’m going to show you in this video. I’m also going to show you how to make fluffy Bugnes, one of my favourite fritter. Both recipes are incredibly fragrant, flavoured with orange blossom water or lemon zests.
    The Ganses de Nice are moist and crumbly and the Bugnes are light and fluffy. 2 different textures that you could serve alongside.
    Recipe 1: GANSES from Nice (GANSES de Nice)
    INGREDIENTS
    250g of flour
    80g sugar
    3 Tbs orange blossom water
    75g soy cream
    60g softened vegan butter, at room temperature
    1 tsp baking powder or baking soda
    1/8 tsp salt
    2 Tbs icing sugar for serving
    UTENSILS
    A skimmer
    A spatula
    A small sieve
    A small sharp knife
    A rolling pin
    A tea towel
    A thermometer
    A medium size salad bowl
    2 plates
    A cup
    A serving dish layered with 3 absorbent paper sheets
    A wok filled with 1 litre of olive oil
    Recipe 2: Fluffy BUGNES (Bugnes moelleuses)
    INGREDIENTS
    250g flour
    1 large lemon or 2 little ones
    1/2 tsp instant dry yeast
    40g sugar
    4 Tbs neutral oil
    100g soy cream
    2 Tbs rum or cognac
    1/8 tsp salt
    2 Tbs icing sugar
    UTENSILS
    A skimmer
    A spatula
    A small sieve
    A small sharp knife
    A teaspoon
    A rolling pin
    A medium size salad bowl
    2 plates
    A cup
    A serving dish layered with 3 absorbent paper sheets
    A deep frying pan. I used a wok filled with 1 Litre of olive oil.
