One of the only things that I like at Panda Express but it's so rare that it looks freshly made (only those shriveled, dry bits in the small "hotel pan" left in the steamer slot for entirely too long). Thanks Happy!😋

@@HAPPYWOK I tried to write out recipes for PF Changs but I am not an expert by any means. I wrote this for the Oolong Sea Bass many years ago and I thought it was really good., Feel free to copy or modify. No problem. You have full rights to it. “A great catch steeped in Oolong tea, broiled and served with sweet ginger soy and spinach”. Calorie lab says: Sea bass, baby corn, dark sauce, spinach, sweet ginger soy). Looks like they nixed the baby corn.
      PROTEIN
      ½ lb. Sea Bass Fillet
SWEET SOY GINGER OOLONG TEA AND DARK SAUCE MARINADE
      1 cup Oolong Tea
1 t. Canola oil or sub. Soybean oil
      1 T. Ginger
      2 T. Soy Sauce
      1 T. Sugar
      4 t. Chinese Rice Wine
2t. potato starch or cornstarch and water for slurry
      VEGETABLES
      Fresh spinach leaves
PREP SWEEET GINGER SOY OOLONG TEA AND DARK SAUCE MARINADE Make a stronger than normal tea and add other ingredients except potato starch, then add sea bass to marinade in a saucepan and let marinade in the refrigerator as long as possible.
REDUCE MARINADE TO A GLAZE Remove sea bass from the marinade and reduce in a saucepan and thicken with potato starch slurry.
ROAST SEA BASS Roast the Sea Bass at 400F, to an internal temperature of 100F. Remove from oven and baste with the glaze. Continue roasting to 110F. Add additional glaze.
BOIL WATER FOR SPINACH Boil a coup of water in a saucepan to wilt the spinach.
BROIL SEA BASS Finish broil the sea bass to internal temperature of 130F. Set aside on a plate.
ASSEMBLE Wilt the spinach leaves in a steamer for 30 seconds. Place on a plate. Add broiled fish
Problems: This was surprisingly good. Can cut down on the amount of marinade/sauce made by about half.
