INGREDIENTS
1 lb (450 g) chicken breasts or thighs, sliced against the grain into 1/4” (5-mm) thick pieces
Marinade
1 tablespoon light soy sauce (or soy sauce)
1 tablespoon Shaoxing wine (or dry sherry)
1 tablespoon cornstarch
Sauce
1/2 cup chicken broth
2 tablespoons light soy sauce (or soy sauce)
2 tablespoons Shaoxing wine (or dry sherry)
2 teaspoons dark soy sauce (or soy sauce)
1 tablespoon cornstarch
1 1/2 tablespoons sugar
2 teaspoons coarsely ground black pepper
1/8 teaspoon salt
Stir fry
2 tablespoons peanut oil (or vegetable oil)
1 tablespoon minced ginger
2 cloves garlic, minced
1/2 white onion, chopped
2 bell peppers, chopped (I used mixed colors)

We made this and it was a hit! I only had 1 bell pepper so I added a few mushrooms.
This is so good..can’t stop eating it w hot rice😂❤❤..I added oyster sauce,rice vinegar and brown sugar …delicious ❤❤❤
mmmmm thank you so much- i have wondered for years about the exact ingredients that compose the sauce for this dish- i also didn't realize the chicken was marinated for a bit..i am so hungry now! but it is midnite, on a thursday, in small town usa- ugh, no black pepper chicken for me right now :( hahaha- but the inspiration will live on, (i pray) to be fulfilled in days ahead! on another note, truly love your camerawork, presentation style and soundtrack- so, so good... i have taken more than my fair share of your time OC..All the best to you- I simply must go hunt down a midnite snack hahahah...take care
Also, what are your thoughts on using Sake instead of Shaoxing wine? I can get sake within walking distance, but have no idea where to find Shaoxing wine. Thanks for any direction.
* Update: I tried using Japanese Sake and it turned out great! I also dusted the chicken with all-purpose flour in the marinade. I think a little bit of flour helped the chicken to retain the marinade. Cooked up very nice using heat number 7 on my induction stovetop. Ate 2 full servings, had a nap, and ate the remainder soon after! Great recipe.

Vinegar is the substitute for wine right?? Or not???
I don't think vinegar is a good substitute for the wine. If Shaoxing wine is not available, dry sherry or Japanese sake are good substitute. If you do not wish to have alcohol in the dish, I would skip the wine, but add a bit of chicken bouillon to the sauce to enhance the flavor.
