Yes, the cottage cheese is a good addition. It gives it a smooth texture. I cook mine over the stove in a pot with lid a water bath (silicone mold with the lid part off) They rise nicely and cook well. It's quick and easy. Thanks for the video.
I was addicted to Starbucks and Dunkin Donuts egg bites until I looked at the ingredients. There are about 20 ingredients in addition to eggs, cheese, bacon, etc. Most are starches, preservatives, sugars and I don't know what. I'm now making them at home with TH-cam recipes in faux sous vide implements in the oven or little sous vide machine (2 eggs make 4 egg bites). Not as delicious or addictive as the store bought but so much cheaper.

I'm walking my dog and decided to look on TH-cam for this recipe and found your video! I just subscribed to your channel, and I would like to do some meal prepping for my kids for school as well as myself as I am the school nurse so we could all use something amazing for breakfast each day! I would imagine that these could probably be frozen and kept pretty well to be used each day. Thank you so much for this! Looks amazing!

Which one gave the creamy texture of the egg? I tried in the oven and my bites had a scrambled texture... I wasn't sure if it was the oven or that I blended the egg mixture. I was think whisking by had would possibly help eliminate the scrambled texture even if in the oven. Also, my air fryer has the sous vide option so I was going to attempt that as well

I do not know anything about regular pressure cookers. I must admit they kind of scare me! But if you know how to use one properly, it should give you the same results.
I would sort of morph both recipes---use back of box, dont incorporate your veg/cheese and you will have the things that you like about the Pioneer Woman recipe, (texture), with the smooth 'almost' Starbucks egg portion that is how I do mine, and I bake in an ordinary over, @350 X 20 minutes with a water bath......#chefskiss

I hate when they put all of that extra stuff in good food! Especially adding extra sugar to everything! Not good.

Yes these egg bites are very versatile and can be adjusted so many ways. I will try the water bath technique!
