Thank you for the recipe. I cooked this on my kamado joe rotisserie @300 deg F for about an hour. It was a big hit with my family. This will be my go-to recipe from now on. 👍

Looks great. How long would you roast this in normal oven for please and what temperature?
Same temp and time in a regular oven... maybe a little longer on the time as the BGE has a natural convection.
Well I'm looking forward to the paella video when things back to normal! Schwarma looked great! That spit probably worked better than a rotisserie as you were able to save drippings at the base.

Love the idea of smoking the shawarma. In the Middle East where I live, some shawarma joints have some pieces of lamb fat in between the layers of the meat and a big chunk on top of their shawarma spit.
Also, they have onions with sumac with just a bit of parsley and lemon juice instead of the pickled ones. I highly recommend u to use the lamb fat and the onions if u can find sumac easily next time you’re making shawarma
