Ingredients:
Dough:
200 ml (¾ cup) water
50g (1¾ oz) butter
150 g (1¼ cup) all-purpose flour
pinch of salt
4 eggs
Caramel cream:
4 tbsp sugar
150 ml (⅔ cup) 30% heavy cream for cooking
300 ml (1¼ cups) 30% heavy cream for whipping
Vanilla cream:
400 ml (1⅔ cup) milk
50 g (⅓ cup) vanilla custard powder or cornstarch
4 tbsp sugar
300 ml (1¼ cups) heavy cream
Caramel Frosting:
125 g (⅔ cup) sugar
45g (1½ oz) butter
75 ml (⅓ cup) 30% cream
Bake: 230°C / 446°F for 10 minutes on top/bottom heat, then 200°C / 392°F for another 10 minutes

I believe that these sweet and very flavoured pastry is a success. I wrote the complete receip, direct from de process shown in this video.
At the end when these pastries are fulfilled with the exquisite cremes appearred a second creme (I think it is a kind of Diplomat creme) that wasn't prepared. I watch at the written receipt and the transcription. Anyhow, you did a good work. I shall make this delicious and different sweetness! Congrats.

Супер рецепт! Это заворное тесто как для эклеров, так и торт "Карпатка"! Я по этому рецепту делала выпечку очень много раз. Только карамельный крем не делала, у меня всегда сливочный крем из масла и ванильного пудинга.

Ale recept je určitě starý aspoň 100 let, vznikl ve šťastné pohodové době. Vaše babička musela být špičková top cukrářka. 👍 Stejně jako vy. Je radost se dívat na vaše videa.

Hi, I am start trying out French Pastry, as I woke up wanting to try making it for some reason. There are a few steps involved but it really isn’t overly difficult. Give it a go, you won’t be disappointed. However the Caramel Crème is very rich, so I evened it out with a bit of salt. A small tip.
