I much prefer the Witt ETNA Rotante pizza oven from Denmark. It rotates the pizza and results in a perfect even cook every time! Also, it can run on mains power or battery.

Looks sweet. I purchased a pizza oven because you suggested it in a previous podcast. Otherwise, I would have never touched it. I’m in America, so I ended up with the Bertello Grande. It uses gas, but you can add wood simultaneously. A 16 inch oven is awesome. At this point, I’m obsessed with pizza! 😀😀

Had an Ooni Koda 12 as my entry level oven and looking for the next step up. I know I love the look of the Arc XL but this is the first video that has made me feel like someone impartial, who knows their Pizza, genuinely feels like it justifies the price
Vincenzo you are my teacher for many years, you showed me the ways to do the perfect dishes, but i always fail to do the perfect pizza. I watched all your pizza videos with other chefs i do everything they do but i fail to do a perfect pizza. Sometimes pizza becomes like a bread, sometimes top part is cook well but inside is not cooked well. Not all of us have a good oven too.
There's always room for discussion lol. While it's not out yet, this summer Ooni's releasing the Koda Max 24. With a 24" stone you'll be able to cook 4 smaller pizzas at once or 1 huge one. Or, cook 2 at a time without having to wait in between for the stone to come back to temp. Has a burner on each side and they can be controlled separately. It Will cost $999 and is only a little bigger than the Koda 16. I know nobody has got to test it yet, but I already know I want one so I can make 18" NY pizzas. The Arc XL is beautiful and I know I'll end up getting 1 at some point. But that new Koda is my dream oven.
@@Bigheadedwon That will be a great size, but if the flame is still mounted in the rear that will be detrimental in seeing the crust coloring as quickly as you can with the side-mounted one the Arc XL has.
I love my Arc XL. The side-mounted flame is ideal because it mimics a brick oven orientation better, along with being able to see the crust coloring a lot easier. The flame will arch over the entire top of the pizza, and will cook toppings faster. Keep in mind that the temperature probe is mounted underneath the pizza stone, to reflect the through-temperature of the stone more accurately. Also, allow the stone to be primed for 30-60 minutes before first usage. The Gozney metal clip is to allow you to lift up the pizza stone out of the oven. The cover is a serparate cost, I picked it up last week. @vincenzosplate, did you use Johnny's dough recipe for this video, or a different one?
My favorite pizza oven is the old school traditional woodfired oven with only timber, no gas, no electricity. But thank you as always Vincenzo for this review. :)

I know you like the wooden peel but I would suggest getting a Gozney peel. They are fantastic for launching your pizza and will help you keep in shape.
I've used the Arc XL for several months now. It definitely stains. I had a crust split, which caused a bunch of smoke. I've tried cleaning it off, but it's not easy to clean off. I'm okay with it, but you may be disappointed if that happens to you. I still love the oven. It makes great pizza, and more. Gozney quality is top notch. Accessories seem pricey to me, but they do seem to be high quality in design and construction.

There is no way I can fit a pizza oven in my kitchen (I live in an apartment) but I did find the video interesting - there is always something to learn from your videos.
I like the thermostat on it, right in the middle. Price is very good, if you look at the rest of the market. BUT! for me the Everdure KILN-R just can't be beat, pizza in, don't touch, wait 3-4 minutes, pizza out! Perfect pizza every time!
My outdoor kitchen has granite countertops and a three foot high granite backsplash with a propane line that can supply the fuel . Would this oven cause the granite to crack?

Those are all very nice ovens,I just don't have the space for one at all, so I made a mini brick oven stacking bricks and using the lid form webber kettle bbq grill, works fairly well, I worked in two kitchens with different pizza ovens one was a large brick oven that was gas got up to 800f easy and the other was gas but the stone was one a rotating base could make 10 12 pizzas at a time
I'm really enjoying my Ooni Karu 12 that I got a few months ago, but I'm also seeing the benefit of having something a bit bigger. This or something like it might be in my future a few years down the road.

I just bought a new WEBER Genesis BBQ so there is no chance of getting an OK from my dear wife for a pizza oven .......... but maybe in 6 month ........ hoping. For now my BOSCH oven that gets to 275 deg. will have to do. Actually it works quite good using a stone base in it. Your pizzas look sooooo delicious ! By the way ... do we soon have to pay $ 50,-- for a bottle of Monini olive oil ???
Pizza Party Emozione. Awesome oven, large floor, optional Saputo Biscotto stones, 70,000 BTU burner, MADE IN ITALY 🇮🇹 Reasonable priced. Nothing electronic, no batteries, just a good solid oven.

Hey Vincenzo. Nice video. I’ve seen your videos where you make Italian American foods, or as you call it “bastardized” Italian food. I think it would be an interesting video idea for you to attempt to make New York style pizza. Americans love traditional Italian pizza too but we crave a good New York slice. Maybe if you make this you can get a sense of what Americans are eating. (For the record, most Americans in the right mind know that pizza here is NOT the same as pizza in Italy. We would never call New York style pizza Italian food, or at least I wouldnt)
What is the gas usage like? Wondering how many cooks, give or take, you could expect from a 9KG gas bottle, Im guessing driving cooking temps like this must consume serious amounts of gas?
This is so funny, I was at a party last night where they had an Ooni Pizza Oven...for me it's a gadget device (like a bread maker) that will end up in a closet or pantry taking up space...
You mentioned about an oven to have permanently in your kitchen, is that an indoor kitchen? I wasn’t sure if there is a problem with using gas powered appliances indoors. I always use mine outside or in the garage with the door open, but is it OK to use indoors too?
Not all properties have a covered outdoor area. 😕 A pizza stone in the oven should work well enough and costs less - also no messing about with gas cylinders 👍 You can also cook more than one or your sides at the same time in the oven 😋
There is that Vito Iacopelli big TH-cam channel about pizzas, he is pizza master from Bari, for example he always say that smooth side should be on top for example, ala the side which was on the top in the box 🤷♀️ You should be reacting to some of his videos ;)
If I am not mistaken most pizzaiolos in Naples put the smooth side up. Johnny DiFrancesco making pizza in this channel puts smooth side up. The quality of the crust, cornicione, is important in Neapolitan pizza. . However, NY style pizza is often made smooth side down. I believe Johnny DiFrancesco would not approve of many of Vito's methods, such as using too much yeast, using honey, olive oil.... It would be nice if he did a reaction video.
It’s a great oven but I just can’t justify the price for me. I’ve been making great pizzas in a normal oven with a pizza stone for 30 years and it’s pretty darn good. Would it be better in this oven, that’s questionable, maybe, but for me, making pizza only once per week it’s just not price justified.
It's not questionable, the pizza from these ovens are far and away better. I've don't pizzas in a home oven and in these ovens. They don't compare. It's night and day. Is it worth it to YOU is a different question. But I don't want you to think that you won't be getting far better pizza from these ovens.
If you do continue with your home oven, I would recommend a pizza steel rather than a pizza stone. The steel holds more heat which helps combat the low temps of a home oven.
I could never justify the cost of a Gozny pizza oven. They are so expensive. A multi fuel Ooni pizza oven is on my radar when funds permit, and even they can set you back quite a bit.
This was a different video for you, i would like to see your version of a well equipped kitchen, as we're all different, in some respects as cooks, I tend use my hands and tools will little plug in equipment,for example I don't own a stand mixer or spice grinder, I could easily but I prefer this in the home kitchen
Looks amazing but, $1500.????? I don't understand why these are so expensive. I'd prefer to pay a bricklayer to build a traditional oven for not a lot more. I guess it comes down to space and convenience. But, still.????

Just to be 100% sure I suggest you to contact Gozney so you can ask them.
After heating my ARK, X, L, the under side of the oven did not get hot at all, only hot on sides and top.

Arc XL is right sized unless you're commercial use. Fast recovery can make many pizzas sequentially for home use.

instance,all around...or the black box around the gas connector....maybe it is different on your emozione but this could be improved.But I think still the pizzas out of it are just great ....especially with the biscotto saputo stones

Hey Vincenzo. Nice video. I’ve seen your videos where you make Italian American foods, or as you call it “bastardized” Italian food. I think it would be an interesting video idea for you to attempt to make New York style pizza. Americans love traditional Italian pizza too but we crave a good New York slice. Maybe if you make this you can get a sense of what Americans are eating. (For the record, most Americans in the right mind know that pizza here is NOT the same as pizza in Italy. We would never call New York style pizza Italian food, or at least I wouldnt)
What is the gas usage like?
Wondering how many cooks, give or take, you could expect from a 9KG gas bottle, Im guessing driving cooking temps like this must consume serious amounts of gas?

This is so funny, I was at a party last night where they had an Ooni Pizza Oven...for me it's a gadget device (like a bread maker) that will end up in a closet or pantry taking up space...

You mentioned about an oven to have permanently in your kitchen, is that an indoor kitchen? I wasn’t sure if there is a problem with using gas powered appliances indoors. I always use mine outside or in the garage with the door open, but is it OK to use indoors too?
you are meant to use them outdoor. I am building a new kitchen in my alfresco area (with windows) but I open the windows and the gas wont be dangerous
Not all properties have a covered outdoor area. 😕
A pizza stone in the oven should work well enough and costs less - also no messing about with gas cylinders 👍
You can also cook more than one or your sides at the same time in the oven 😋

There is that Vito Iacopelli big TH-cam channel about pizzas, he is pizza master from Bari, for example he always say that smooth side should be on top for example, ala the side which was on the top in the box 🤷♀️

If I am not mistaken most pizzaiolos in Naples put the smooth side up. Johnny DiFrancesco making pizza in this channel puts smooth side up.
The quality of the crust, cornicione, is important in Neapolitan pizza. . However, NY style pizza is often made smooth side down.
I believe Johnny DiFrancesco would not approve of many of Vito's methods, such as using too much yeast, using honey, olive oil.... It would be nice if he did a reaction video.

It’s a great oven but I just can’t justify the price for me. I’ve been making great pizzas in a normal oven with a pizza stone for 30 years and it’s pretty darn good. Would it be better in this oven, that’s questionable, maybe, but for me, making pizza only once per week it’s just not price justified.
It's not questionable, the pizza from these ovens are far and away better. I've don't pizzas in a home oven and in these ovens. They don't compare. It's night and day. Is it worth it to YOU is a different question. But I don't want you to think that you won't be getting far better pizza from these ovens.
If you do continue with your home oven, I would recommend a pizza steel rather than a pizza stone. The steel holds more heat which helps combat the low temps of a home oven.

I could never justify the cost of a Gozny pizza oven. They are so expensive. A multi fuel Ooni pizza oven is on my radar when funds permit, and even they can set you back quite a bit.
This was a different video for you, i would like to see your version of a well equipped kitchen, as we're all different, in some respects as cooks, I tend use my hands and tools will little plug in equipment,for example I don't own a stand mixer or spice grinder, I could easily but I prefer this in the home kitchen

I think the quality justifies the price but yes if you're on a budget it's better to look for more afordable options.
