Hey Vincenzo! I’ve followed you a long time now, but I didn’t receive this video as a recommended video when you released it. I’m watching it on 12/22/24 just before Christmas. I recently watched your video with your guest (Robert?) from Bologna cook a fully authentic Bolognese sauce, which I made a few nights ago. It came out great! Thanks! 😊 I remember first looking at the Roccbox, but it had limited US distribution (resellers) at the time, plus it was small. I liked the height being tall and having a strong gas burner. I didn’t like the small opening and size, being that the largest pie that you can make in it is 12”. I wound up looking at the Ooni Karu 16. It was large enough to cook a 16” pie and had a door on it. The flame looked adequate in videos, but in actual use the gas burner is its weakest point. The burner never worked right after the first two months of use. It wouldn’t light at all, or the flame would go out in the middle of a cook. Perhaps most importantly, you couldn’t regulate the flame/temperature for proper pizza cooks. If you leave it on high (given it stays lit) you burn your pie, mostly on top but sometimes the bottom too. If you try and lower the flame/temp, it goes out. It was so frustrating to use, we gave up using it. After trying to get a hold of Ooni (who only offered support via texting through their app, no phone call support at the time. They now offer you to schedule a call, which we will attempt sometime later. They wanted us to make a video on how we use it and attach it to a text, showing them how we lighting it, set the temperatures, etc. I have a 5 years warranty on it, but they didn’t seem to care about making it right. They seemed to want to blame it on user error. I think there should be a class action lawsuit because many, many others have complained about their gas burners having the same problems. IMHO, it seems that this gas burner is a poorly engineered, failed design. Ooni didn’t seem like they wanted to make things right. I almost sold it this past fall, but we decided to keep it and give it another try with Ooni to see if they will make it right. I almost bought that Gosney Arc XL, but we’ll take a wait and see if we can revisit a fix with Ooni come springtime. Ciao! It’s which one does the best job within your budget and is durable - looks come after 💵 The ability to remove the stone is an absolute bonus for cleaning and replacing if necessary 👏
I have an Ooni Koda 16 and very happy with it, but when it’s time to get a new pizza oven I’m definitely going to look into getting a Gozney. 😎👍🏻👍🏻🍕🍕🍕🍕🍕
Frankly, you shouldn't really worry about it, normal indoor electric oven is perfect for baking bread. Unless you don't have it, in that case yeah, as long as oven can produce even heat at lower temps for longer time, anything really goes.
I like the discoloration on the Roccbox. It's probably unavoidable due to the high heat and it adds some character. You should think of the discolorations on your pizza ovens as memories of all the beautiful pizzas you made together.
Starting to get into the outdoor cooking are we Vincenzo? I have a pair of Kamado Joe smokers, and the big one (Big Joe) has a modification to turn it into a pizza oven called the DoJoe and it's fantastic for pizza night, very even cook without needing to turn the pizza, classic woodfire taste (because it's a charcoal smoker), it's awesome.
Thank you Vincenzo, new subscriber here. I’m looking at the Arc XL, do you think it will be an issue running the unit under a covered porch? I obviously don’t want to burn my house down and secondly, have black soot above on the ceiling where the smoke goes. Thanks for your advice and keep it up.
great video. I have just bought an electric L'originale Delizia. goes up to 400c but yet to try it cause my dough is wrong. I bought it from an Italian guy who's going to move home. He says it works well.. But I am going to buy one for the garden, probably the Roccbox because I'm poor.. But at least I know it works. Thank you.
I have the Arc XL. I've been using it for a few months - it's great, but the front stains like crazy! It's not a deal breaker & nothing Barkeeper's Friend can't take care of, but the staining is an issue with that oven.
Good description .. Gosney make a good product but they have competition now, ive bought a Witt Rotante which is impressive about the same price as the arc but.. two features the gosney doesn't have..a rotating stone so no messing about with the paddle or burnt bits..also a second burner under the stone, so a more controllable base on your pizza..Also a great size opening and 16inch pizza is possible

I got the Ooni Karu multifuel. I have not gotten to use it yet because of my diet 😂.. but, it is also super light and i love thaf it has that door to stop the heat from escaping! I definitely look forward to trying it out once I hit my goal weight 😂 so i will report back but, you also can remove the stone from the Ooni as well!
Great comparison video! Your ARC XL review video really shows how incredible that model is. It seems perfect for those who will mostly use it at home, but may want to occasionally take it elsewhere.👍😊
I've heard good things about the Everdure Kilm which is also good for New York style pizza. A comparison video with Everdure Kilm and the Gosney Arc would be fantastic Vincenzo.
@@vincenzosplate I have the Bertello Grande. It went for that one because it is 16 inches wide, and it can do wood and propane simultaneously. It also preheats in ten minutes. The propane warms the stone, and the wood fire heats the top of of the pizza.
I went for the Dome S1, I thought it was a better compromise for my needs…A little bit bigger than the Arc XL (so easier to change spot and maneuver during the cooking) and has also the removable stone.
Pizza stone can work decently well, but not the same result really. It’s really hard to get that light crisp and good coloration on the outside with a still soft interior without the very high temperatures and quick cooking of a pizza oven. If you have a backyard, maybe just one of the smaller 12” pizza ovens would be the right call, if you’re ever inclined enough.

@@vincenzosplate I have a Siemens oven capable of 300C for a short time but work very well at 275C on the pizza setting (bottom heat with fan). It takes exactly 5min to bake one pizza. The cheese melts fine when cubed and the bottom is crisp but not always perfect. The edges puff up nicely and crisp up but do not get very much that charred crust. The good thing is that I easily can bake my 16 inch pizzas.
My Ooni is also multi fuel. Last summer i uses charcoal and wood. Regulating the oven temp was a challange. This summer I’m switching to propane to see if the temp will be regulated more

Wood fired does nothing, 60-90 seconds isn't enough time to impart smoke flavor from the wood. Ant smoker of meats will tell u this. It's just a hassle and inconsistency for no reason.
Hello - shill. The latest technology has: 1) Rotating stone 2) 2 burners - one on top of the stone and 1 below the stone These expensive old-fashioned ovens don't.

I bought the Roccbox earlier this year, then the Arc XL was introduced and I bought that, too. They both work great, I just wanted a larger oven.

I'm not sure why, but my Arc XL is staining by the vent. It seems relatively easy to remove most of it. Regardless, I love this oven!

What about versatility? The Dome can cook with wood and charcoal as well. The other two you can’t. That is important for some people.

Why don't pizza makers have rotating plates like microwaves to cook evenly? This need to rotate shouldn't be hard to solve.
