I'm from Alaska which is technically part of USA but our accent is more like Sweden or Mid-Western. Kent's accent delights me also. Sometimes i have to turn on captions to understand certain words. Such as when he says "oil" it sounds like "uuuhl" or "bread" is "brie-head." But I've watched so many of his videos that I'm now intimately familiar with the regional dialect he uses.

I made this with a few mods since I'm from Colorado and used to working with Pueblo chilis. The rolling technique and shallow frying is brilliant! Thank you for that. I had the best chimichangas I've ever had! We served them with Colorado-style green chili gravy, cheese, sour cream, and lettuce. It was amazing! They actually stayed crispy even after putting the green chili gravy on top. Thanks Kent!

First of all, love this...I am the cook of the house, and watch all your videos...Kent, just got in a big argument with my spouse....over the dogs and some of the things they do, like get into the trashes, and other things....I was really upset at the dogs and she indicated I needed to understand they are dogs and not humans. Your video, really helped me calm down and bring a smile to my face...I know now I was in the wrong...and now here we go...will go and admit it. Best couple counseling session ever.

Those look good! Since I was a kid we always made these with ground beef and we deep fried them. Just throw a tooth pick in each end and in the middle like a sewing needle, in and out twice and they hold perfect!

I just had an idea about how to deep fry a burrito: fill the burritos with any of the yummy stuff you want, carefully fold them and place on a baking sheet, with wax paper. Place them in a freezer for about 15 minute, until the tortillas shells are firm. Fry in hot oil - 375+ - until golden brown. I bet the hot oil would flash fry the tortilla in place.

I juiced mine up with chipotle and adobo and was not unhappy about it....and you nailed it. The low fry and solid wrapping is key. Mine weren't oily at all just very crunchy and very tasty.
