It’s so great that you let your 5 yr old help you cook. My Mother & Grandmother let me help too & 6:26 at 75 yr old I still love to cook.

Your toddler laughing was pure joy! I use freshly milled wheat for all our bread products, but haven’t made anything with potatoes. Everything looked wonderful; thanks for sharing.

Should I ask why your mom didn’t make meatloaf?? 🤣 For anyone that cares, Rachel’s dad is an extremely picky eater, so Rachel’s mom was limited with food options when cooking for the whole family. Rachel’s mom also parented when convenience foods were the seemingly best option. I so appreciate the knowledge Rachel now bestows upon me (her mom) to recognize there are healthier and often better tasting options. I couldn’t be more proud of you, Rachel! And I can attest to how delicious many of the things on her channel are (even if her dad won’t try them)! ♥️

I’m a picky eater, too, so I understand. My pickiness is a result of being on the autism spectrum, I wonder if Rachel’s dad’s is too? I can see why you’re proud of Rachel, she’s pretty awesome!

With 4 kids and a husband who was raised meat/potato style from an awesome cook, I was and am blessed that my family, for the most part, enjoyed what I put in front of them and I was able to ‘spread my wings’ in the kitchen. All 4 still won’t eat raw tomato or onion-most of my grandchildren prefer not to either but none are picky eaters. A big part of why I follow so many healthy home style cooks-thank you Rachel! Food has always been a family love language❤️😂

As the wife of a very picky eater, I can commiserate. Hubby was raised in an officer's family and I tease that he was always served lobster and steak so he doesn't like convenience foods or casseroles. It makes menu planning challenging. Your daughter is doing a great job!

Yes we had meatloaf growing up. Meat and potatoes family. I never liked it but my husband loves it so I’ve found a recipe we all love.

I bought a 3” PVC elbow at either Lowe’s or Home Depot and place it over the vent to divert the steam. Since I use my instant pot on the counter next to the stove, I turn on the vent to suck up the steam. Yes, I know this elbow is not food safe, but it’s not touching any food; it’s just diverting the steam. It’s a lot cheaper than the vent cover you can buy online.

I’m so happy for you with the home grown onions!! I’ve been using mine since drying them from fall! I’m almost out..
The eggs will stick the fresher they are and thats why the store bought eggs don’t, because they are older. At least that’s what my experience and knowledge is.

Your pantry challenge videos are fun to watch and remind me of my young mom days, thank you. I'm so old that it seems 'THE' meatloaf was the Lipton dried onion soup recipe and it was ok but hubby dislikes meatloaf especially that one. I make a non-soup one every couple of years but always use a loaf pan so that there will be nice tall slices for leftover meatloaf sandwiches. Please consider always rinsing your rice. It only takes a minute and removes excess starch, dirt and debris from the processing facility which are not all stainless-steel-sterile. But starch isn't all bad, you add potatoes to some breads to increase the starch which helps the product retain moisture and make it softer, supple and last longer. Your buns and that meal looked wonderful. We've been enjoying sourdough hamburger buns but with only two of us, I always have to freeze the extras. Have a great week! (Send some snow to Eastern Washington, please?)

I did grow up eating meatloaf. My favorite is Italian meatloaf. I put Italian seasoning in the meat, use Italian breadcrumbs too. Then I put about 2/3 of the meat in my loaf pan on the bottom and up the sides. Then fill the middle with mozzarella cheese! Top with the remaining meat. It’s a cheesy surprise! I used to top it with spaghetti sauce but my daughter always preferred ketchup, so now that’s the default for us. But either way is great!

I use same recipe for meatloaf and meatballs. They taste yummy in spaghetti.

I add chopped pickles and sometimes a little bacon to my cheeseburger meatloaf. I am going to try to remember to add your twist to the ketchup next time.
This week I made “Mexican” meatloaf. Green chili, eggs, panko (that’s what I had on hand), onion powder, garlic powder, coriander, Ceylon cinnamon, salt, dried cilantro. Mixed some leftover red enchilada sauce with ketchup for the topping.
I agree, with two pounds of meat a larger flatter pan is a better fit for cook time.
I also did NOT grow up eating meatloaf.
I actually have been super disappointed in my instant pot. I do like it for rice, eggs and sautéing do not go well for me🤦‍♀️

Just let homegrown eggs have about a week before you boil, instant pot does great with homegrown eggs

My dad is the meatloaf maker. He prefers ground beef and ground pork, onions and peppers chopped roughly and bread crumbs and eggs and seasoning. He always cooks his on the broiler pan on rack so it doesn’t cook in the grease. (The best I’ve ever eaten-even sometimes just shape into patties and make meatloaf burgers ) I like to top mine with sweet and sour tomatoes (just vinegar sugar salt and pepper cooked down til jammy) because my meatloaf is never as good as my dads

I add milk to my bread crumbs to have a moist meatloaf about a half cup
