i am indian and vegetarian so i consume diff lentils on a daily basis. I always wash the lentils before using. If you wash the lentils the first time under water, you'll see the water turns white or dirty, so keep washing till the water you drain is almost clear. The lentils will taste much better too. Also if you use a pressure cooker for lentils they'll cook in no time.
Usually we use split pigeon peas (yellow lentil) for everyday at home as an accompaniment to the meal.. The ingredients involve ghee, cumin, curry LEAVES, green chilies, tomato, coriander and the most crucial bit - garlic! Lovely recipe here Ben! Try it with whole tomatoes and leave out ginger may be.. Also, since you mentioned the yogurt with saffron, there is an amazing Marathi (from Maharashtra) dish called Shrikhand.. You must try it..
I don't know if someone answer you in all this time, but I am in the same situation and I have made it with onions, it always works perfectly (?) for me c:
The lemon is definitely needed but I think next time I will add it into the lentils instead and maybe add either cilantro or parsley into the yogurt, or maybe even the lemon zest as the dish really needs acid to balance out all the spices but too much yogurt (especially with the saffron in it) is way too overpowering. It's also worth noting that if using cod without the skin (all I could find) is best prepared using an alternative cooking method such as roasting or grilling in the oven, as pan frying will make it fall apart. Overall 6/10.

How about seasoned aubergine or tofu? If you're looking for a meat substitute then quorn steak could work too!
