HOW!?! Is this a convention of choir singers?? How do you turn an audience into such a wonderful choir?? And that they only sing according to the conductor's orders without rehearsing?!? And that it doesn't fall apart? People are capable of anything if there are many of them and if they breathe as one, intuitively, by feeding off each other. Tears are inevitable...

Intuitivety have a role, but it's also a lot due to the fact that the average of everyone's mistakes make for the correct note (wisdown of the crowd Theory), and since the merging of it create the illusion of a proper note, the bigger the crowd, the nicer it will sound. But, if you zoom in and get a micro in the crowd, you will definitely hear quite a number of wacky singing.
You can hear it in the "Security Staff's Lovely Reaction" video of one of Jacob public choir, since it was filmed from the public and not from outside of it

What does it mean that they "go chromatic"?

Small bit of music theory before I explain the clip.
This vocalisation is in A major, a fairly common key.
All keys are comprised of 7 notes - in the case of A major, it's A, B C#, D, E, F#, G#, and then the cycle restarts at A.
Almost all of the other Audience Choirs that you'll find on here are "diatonic" - in other words, they exclusively use the 7 notes that belong to the scale the vocalisation is using.
The opposite of diatonic is chromatic.
You can play the chromatic scale just by playing every single note on a piano in order - C, Db, D, Eb, E, F, F#, G, G#, A, Bb, B, C, etc.
The point being, chromaticism is the idea of not sticking to any scale other than the chromatic scale - simply going to the nearest note either up or down.
Now, onto the clip.
He is conducting the whole audience, but only two thirds of the audience at the beginning of the clip.
At 0:05 for example, Jacob directs them both to go down one note - from C#/E to B/D - by lowering both arms completely, then back up to the original position to return to the previous notes.
What he does for the first time at 0:09 is a subtle change in physical direction to get them to lower their note down chromatically. This time he tilts his wrists down and keeps his arms stationary.
The intention is that he wants them both to go down half a step, to notes which aren't actually in the A major scale - he gets the audience to go to a C/D#, not the B/D that they sang a couple of seconds prior. They took the change in direction exactly as intended.
This is a fairly difficult concept to explain, even verbally as I've just shown with this mini-essay. The fact he did it without even telling them, just a different gesture, shows how musically intelligent everyone involved there is. It's insane!

There are notes between the notes in a scale, because a scale wont use all 12 of the notes that we have in western music. going chromatic means that they sang one of the in-between notes instead of just following the major scale up and down with his gestures

In a major scale (it's also the case in minor scale but in this case it's a major scale) you take only 7 of the 12 notes that exist in western music. There is a semi-tone between two consecutive notes but in a major scale there is a tone between most of them (except between the 3rd and 4th of the scale and the 7th and 1st), which means there is a note between 2nd and 3rd and between 4th and 5th notes of the scale that is not used*.
Usually, people tend to instinctively stick to the major scale, but this time for some reason they went to the inbetween notes, going down only a semi-tone.
*I cited the 2nd and 3rd and 4th and 5th because in that case that's the notes they went to : they were on 3 and 5 and went down a semi-tone but there are inbetween notes elsewhere in the scale.
