No exaggeration... this is probably the best recipe video i've ever seen on youtube. I literally smiled through the entire video. You made me think of my childhood, and memories I have of eating food made with palm oil. The food looks great, but the stories you were telling made the video so enjoyable to watch. This was seriously so nice to watch. Thanks for the amazing video, and I'm cooking this tomorrow no question. My plantains aren't ripe yet but I don't care hahaha still need to make it ASAP
Trying this recipe today. I grew up eating black eye peas southern style. Usually cooked down with smoked turkey. My friend's mom, who is Liberian, made a pot of black peas once. She had a another pot of stew on the stove for dinner but I spotted a small pot with black eye peas in it. Not sure if it was for everyone but when I tasted it I was shook. It was so good! The flavor, I was speechless. Thank you for the recipe.
Was going to make this tonight but still need to pick up palm oil, going for the flavor as you suggest, BUT, no plantains either. You didn't give too much of an indication of how to cook the plantains?? Suggestions? Also what was the stuff you sprinkled on top for serving??? Thank You, dear lady

I didn’t use any bonnet peppers as it’s not a regular item I have in the house but next time, I’ll buy them ahead and give it a try. Now, I know what red, red is 😘

I’m a white German/American woman. I’m also a nurse and for a few years took care of a boy from Togo (who is doing fantastic now). His family introduced me to West African cooking. I was surprised at the flavor and notes that palm oil has. If I use it I try to find some that is not harming the habitat of the Orangutan. It is nice to know that in a pinch I can use coconut oil! Thank you for sharing this!

If you buy Palm oil, usually from West African shops not over commercially packaged then you know its from Women's cooperatives in Ghana, Nigeria or Togo, wherever they are sourced from. Coconut oil was a suggestion due to being in the same plant family, the flavour really is distinct and beautiful.
I have tried this recipe a few times, and I keep getting orange orange :( more liquid consistency also. I will try watching the video closer because yours looks perfect!
Niceee. I have a question. If you didnt want to use commercial vegetable stock, what herbs would you replace it with please? or do you make your own vegetable stock?

Thanks for this Freda! I'm doing a vegan/vegetarian challenge for 6 weeks to reset my digestive system and retrain my taste buds. I just wasn't sure how to go about it without the shrimp and other meats.
Hey Juliet! Thank you so much for stopping by. That is wonderful. I try to go vegan or vegetarian once a year for a period of time. It really opens up your mind to possibilities you would have never thought of. Enhance flavours with things like soy sauce, go extra on the onions... I mean extra. Fry them till caramelised, sprinkle them over your dishes. You can also try the onion chips that are popular over salads. I would not recommend going the vegan cheese etc route, as the stuff is highly processed. I am so excited for you. Good luck and check out my Vegan_African pages for a bit of inspiration.
Well, afraid I don't have easy access to red palm oil, so was glad to hear other oils are possible, if not perfect. On that note, would you have any particular suggestions for alternates to the plantains? Would rice or potatoes work?
Hi there. It has a savoury flavour with some earthy and smokey notes to it. The smell it has is reminiscent of the comforting smell that comes from sauteed pumpkin and onions. I have used smoked paprika in the past in some dishes and still got some great flavour. Coconut oil adds a different but very pleasant flavour as well.

I added some carrots because I had read somewhere that someone said that palm oil had a slight taste of carrots. I also used a little red food colouring to emulate the lovely colour that yours had. I will be sure to try your suggestions next time! Thanks for your recipe and expertise!

If I use less palm oil will I still get the same taste ?
You should get the. same taste so far as you don't mix it with other oils. Allowing a tablespoon per person is not bad, even on a reduced fat diet.
