Thanks for sharing this. I wasn't sure how to even access the oil pan. I was underneath the car for the cross brace install on my 14 RS5 and saw all those screws and said there's no way! And holy moly those are a lot of screws to remove to get to the oil pan bolt.

As long as it is only a top up you are fine. If the overflow tank is empty, you might get an air bubble. Either way the cooling system is a sealed system. You’ll need to hunt down why you are low. These cars are prone to oil and coolant leaks. Don’t let things drag on as it will get expensive!
I was only able to get the black plug loose to drain the fluid. The first plug was stripped and I didn't have an extra. I did 2 flushes and let it drain for a good amount of time. Should I be okay with the new coolant or should I get a new coolant pipe plug and do another flush?
The coolant system is under pressure and I would personally always replace anything that was stripped or leaking. If you didn't remove the plug on the coolant pipe (and it is still sealed) it just means there is a chance you didn't get as much of the old coolant out as possible. Not the end of the world as there is always a little left. Sounds like you did 2 flushes though so you could be good. Just make sure when the engine is fully up to temperature that there aren't any leaks!
Yes if you have a B8 with the 7-speed S-Tronic dual clutch transmission. I’ve got a B8 S4 and a B8.5 S4 DSG cars too and the process is the same. The only minor difference on the B8 S4 is that it had no external filter.
