Also, it takes self control to not end a fight that way. If you're looking for a way to end the fight like that, you don't have self control.

In the octagon you have to secure the win, thats why they keep pounding their enemies on the ground while the ref runs at them. I dont think thats the right place for respect and sportsmanship. Doesnt mean i want the people to poke out each others eyes, no fouls but no mercy

that's how you're supposed to fight. You can understand your opponent's intentions by looking into his eyes. This is basically the first thing they teach you in almost all martial art forms.
