Hi i'm from Brazil, those little breads are called "pão de queijo", wich means literally cheese bread, and the beef with the golden fat on the edge is called "Picanha" it's really traditional here.

Lamb is gamey which gives it a bitter taste and I really enjoy it with mint jelly because it helps cut through that and adds a freshness to it without being too sweet
I’m from San Antonio Texas baby and I’ve been to a couple places and they have a card with a green side and a red side and whenever ur ready for the meats, you put the card on the green side. What you're eating is a typical brazilian food you encounter in every corner in Brazil, but also very popular in Argentina. We call it "churrasco" (literally translates to barbecue). The "bread balls" are called Pão de Queijo. The meat you ate after the first ribs are probably "Picanha", which is one of the preferred and most premium cuts of meat in Brazil. Pao de Queijo is also a staple. The sausages are Linguiça Toscana. The salsa-like "sauce" seems like a modified Vinagrete, which is basically made out of 2 parts onions, 2 parts tomatoes, 1/4 bell peppers, half a cup vinegar or lime juice, a cup of good olive oil, and salt & pepper to taste. Vinagrete is great to balance out fatty cuts of meat.
I am surprised you did not finish. I live in Texas and have not been there yet. Heard it was expensive. So I hope to go there one day cause those ribs and meat looked good.
my experience at texas de brazil in my city was amazing. my fav was bacon wrapped filet mignon. all you can eat meats packed with flavor. shit was fire

Now, this food really looks Brazilian barbecue, apart from some meat that we eat in a different way, such as the ribs (barbecue sauce is more American than brazilian), but every meat looks tasty. I’m happy for you! Next time try feijoada, I think you’ll love it.
I’m sure you know of Raina Hung. Not sure of her last name. She lives in L A. I’m almost sure she went to a place like you’re mentioning. They come around to the tables with the meat and the biscuits etc. I would never have thought you could do delivery at that type of place. Boy did you make me hungry!
