You kept it 💯🙏 I don't have a rolling pin yet, I don't have wine either, I'm in recovery, but that never stops me from making great scratch made dough, for pasta, cakes, bread, or pastries! I have been looking for this method for YEARS. I do not know how long Italians have been cooking ravioli, but I but when they started (assume 100 years ago) they did not succumb to a dumb marketing campaign for them to buy a pasta stretching machine for $100 . Excellent.

i made this for dinner, it was my first time making ravioli. the dough was amazing, i'll probably use the same recipe for make fettuccine etc. the tricky part was rolling down the dough for me. i rolled a bit thick than it should be and the corner parts wasn't as enjoyable as the middle part but i'll definitely do it again, thanks for the recipe

No, that's too thick. Maybe you can better check the video at 3:54 when I lift the dough and you can see the thickness. Or pause the video at 3:56 and watch full screen. Have fun cooking!
This was really good! Didn't do the pine nuts fry, just boiled them and put them in a Bolognese type sauce. Was pleasantly surprised how good it was, subscribed to your channel. Heads up to anyone thinking of making this - your arms will be sore, takes a lot of rolling to get it thin.
Wouldn’t recommend it. Spinach needs a bit of oil and heat to develop the flavours. It also shrinks a lot which wouldn’t happen when you add the raw spinach into the raviolis
I think it will be around 250-300 grams. Yes, you can substitute pints nuts for sun flower seeds but they have less taste. Would rather go for another nut, like cashew, (blanched) almonds or pecan.
Your video has been an inspiration for me. I went through the steps but had trouble with trapped air inside the individual ravioli and had to cut a slit in the side of many of the pockets to release the air, then seal the holes by massaging the dough. I did not notice any trapped air in your video. Any trick to laying the second top layer of pasta dough over the lumps of filling to avoid trapped air? Thank you for any response. Appreciate it.
Thanks for your kind words! After adding the second layer of pasta on top, you should start pressing from the center and then move towards the edges. I prefer to make a small C-shape with the back of my hand and close it with my other hand.
@@Forketti Thank you for taking the time to describe your process of minimizing air trapping. Very helpful. BTW adding nutmeg to the spinach ricotta ravioli adds a nice flavour to the dish. My wife likes to do that when she makes lasagna. My next cheese ravioli will consist of ricotta, Parmesan, and nutmeg. Thank you for the inspirational TH-cam videos. I would suggest to shape the left over dough into raviolis and freeze them. I have done this before and it worked well! Just make sure to add the raviolis on a tray with some parchment paper and a bit of space in between so they won't stick. As soon as they are frozen you can add them to a ziplock bag or Tupperware.

Sorry to hear. For the next time, check the flexibility of your dough before letting it rest. If it is not flexible you should knead it longer or add a little bit of olive oil.
Because you need it for the filling and for the sauce. Also olive oil is named twice. Check the white text in the top right corner in the ingredient overview to see the difference.
No, you don't have to. You could replace the spinach for pumpkin or make this recipe with a cheese filling. Just add your favourite cheeses into a bowl and mash it all together. Use a tablespoon to add the filling. Good luck 💪🏼

One must not underestimate the efforts in massaging that dough for 15 mins and rolling it out.

My dough wouldn't roll out thin. So it was thicker and when I boiled it, it was very tough
