Episode 7: Carrot Ginger Dressing

  • The best refreshing and healthy dressing to elevate any salad or dish! Perfect for spring or summer.
    Recipe:
    1 peeled carrot, chopped (about 1 cup)
    1 white onion chopped (about 1/2 cup)
    2-3 tbs ginger
    1-2 cloves garlic
    1 tbs water
    3 tbs soy sauce
    1/4 cup rice vinegar/white vinegar/lemon or orange juice
    2 tbs sugar or honey
    1/4 cup oil vegetable/canola
    Salt and pepper to taste
    Blend the ingredients to a consistency you like. Lots of the time I don’t add oil or sugar if I am using it right away or the carrot is already sweet.
