  • In this video, I show how to make a soup made of fish smashed in a mortar. I used catfish in this video, but other fishes may be used.

    Anytime I attempt to make Lao dishes, I use your recipe. Then I adjust to my liking.

    I made this tonight for dinner after seeing this video last night. It's soo good! I added a squeeze of lime juice and it was perfect. Thank you for the awesome recipe Nana!

    I don't have that type of mortar and pestle, can I use a food processor instead?

      santolify if you don't have a mortar and pestle, you can use a food processor to chop the roasted ingredients. Also try to mash the ingredients together by pressing with a spoon. mix with the fish and broth in a bowl. Break the fish into smaller pieces by pressing against the inside of the bowl or before you put it in the bowl.

      santolify it will be best if you have a mortar and pestle to smash the roasted herbs together, so when you get the chance you should get a set.

    At 0:41 did you add the garlic, shallot and chili peppers in with the broth while the fish cooked? I think I missed a step. :(

      santolify the roasted ingredients were used at 4:46 in the mortar, not cooked with the fish.

      santolify at 0:41 I was just showing the what the garlic, shallot, and chili look like before roasting. I didn't show the actual roasting process in the video, just went quickly to what they look like after roasting. The roasted ingredients are smashed in the mortar before adding the broth.
      In any case, I'm glad you and your husband enjoyed it without the roasted ingredients. Next time you can try with them. :-)

      I actually did roast the veggies and combined that with the eggplant and catfish and it was so amazing. I was watching the video to see if I missed anything (hubby loves this recipe so much he wants me to write down the recipe so he could keep it in his notes) and happened to notice the floating garlic and chili in the broth that's why I had to ask.

      santolify ohhh I see now. The chili and garlic must have fallen into the pot with the other ingredients. I don't usually add that to the boiling water. It's ok, more flavor. Lol.
