    A recipe with baked eggplant and kapia peppers, in a jar, easy to prepare and with excellent taste. Bake the eggplant and kapia peppers and clean. We prepare the marinade from: 50 ml Apple cider vinegar, 50 ml Oil, 50 ml Water, a teaspoon of salt, 3 tablespoons of sugar, two bay leaves, a teaspoon of peppercorns.
    In this composition, put two large onions, cut into small pieces, when it starts to boil. Leave on medium heat for about 15 minutes, until the onion becomes translucent. Chop the eggplant, cut the peppers into small strips, add the onion and mix. Put the salad in jars, pour a tablespoon of oil on top and seal the jars with lids. Keep cool for the winter.
