Good of Liza to embark on this training journey with him. Get all these sorted out first, it matters a lot compared to the bike. If i may so add, strength training for glutes and quads matter a lot too, followed by core strength and then upper body (eg push ups and maybe good mornings are great). A bit of hamstring curls with just resistance bands would be nice, to avoid muscle imbalances (monster quads but ultra weak hamstrings might create issues in joints etc). Basically do it holistically including being consistent, getting good nutrition from your diet/supplments, and recovering at the best rate despite having age catching up on you, and not only focussing on the bike with $$$ upgrades which matters not as much comparatively.
2-4 months of consistent zone 2 training should get you to roll 30-35 easily (while maintaining zone 2-3 heart rate). personally achieved it in 2-3 by training zone 2 for at least 90mins (staying below 150hr) 3-4 times a week alone.

Good point. Almost all cycling groups are modelled around speed..eg rolling speed 32-34km/hr... 😢
