    생선손질 조금해보고 회떠본사람들은 다아실듯 저렇게 슥삭슥삭하는게 엄청자연스럽고 쉽게보여도 진짜고수가아니면 엄두도 못낼 스킬인걸... 진짜 일식 베테랑급의 엄청난 기교가 들어간건아니지만 단순 회뜨기의 정석과 숙련도가 최고로 쌓이면 어떻게 되는지 보여주는 예시인듯요.. 그리고 청결도 엄청신경쓰시네요 진짜 믿고먹을만 할거같아요!!

    횟집 위생때문에 힘들어도 직접 손질해서 먹는대 이분 위생 역대급이다
    이런분이 하는 혓집에서는 위생걱정없이 마음 편하게 먹을수 있을것같다

      [인터넷 발췌] 머리로 철사를 집어넣어 척추를 끝까지 찔러넣는다. 이렇게 생선을 즉사시켜 자연사하기 전까지 받는 스트레스를 최소로 줄여주는 동시에 신경을 파괴하기 때문에 생선살이 한껏 먹기 좋아지고 숙성하기도 좋아진다.

      척수신경을 파괴하여 발버둥과 몸부림을 줄여 숙성시 생선의 감칠맛을 최대한 보존할 수 있게 됩니다.(숙성하지 않을꺼면 필요 없다고 보는 시각도 있습니다.) 그런데 저는 안전을 위해서도 유용한 거 같아요. 머가리를 딴 지 한시간은 족히 놈을 손질하는데 잘린 신경의 단면을 건드렸더니 점프를 하더라구요.
      광어같이 미끌거리는 놈들, 덩치가 좋아서 힘좋은 놈들, 숭어처럼 끈질게 오랫동안 꾸물거리는 놈들은 손질 시 불편하기도 하고 경우에 따라 위험할 수도 있어서....

    숭어랑 밀치의 차이는 제철의 차이인가요?
    맛에 차이도 나나요?

      제철의 차이는..
      봄에는 숭어(보리숭어)
      겨울에는 가숭어(참숭어)가 나오고
      밀치는 겨울에 나오는 가숭어(참숭어) 양식입니다. 저희는 보통 자연산 가숭어(참숭어). 양식 밀치 이렇게 구분하는데 지역방언으로 가숭어(참숭어) 작은사이즈를 밀치라고 부르는곳도 있습니다.
      자연산 숭어는 탱글탱글함이 있고
      양식 밀치는 쫄깃함이 있습니다^^

      비늘은 위생적으로도, 안전상으로도 굉장히 좋지않습니다. 그래서 보통 생선을 잡을때는 비늘이 없는생선을 제외하고는 거의 벗기는 모습을 볼 수 있습니다.

    숭어는 지아이를 제거안해도 되나요? 숭어회는 항상 저렇게 썰려나와서 제거 안해도 이물감이 없는지 아니면 핀셋으로 뽑아서 나가는지 궁금했어요

      숭어는 지아이 없고요.... 등쪽에 약간 2~3개 정도 뼈 있는데 그것만 도려내 주면 되요.

      모든 자연산 활어에는 기생충이 존재하거나.할수도 있습니다.
      양식어종은 없구요.
      밀치는 양식어종인데 ...
      아직까지 그런것을 보거나 듣지는 못했습니다^^;;

    Sorry it has taken me so long to reply to your last comment- I and my family are fortunately all well. As you may know, they have begun to distribute the new COVID vaccine here in the UK, and the first people have had their first shots. It is going to take time for everyone to have been offered it, but we can see an end to this situation at last.
    I hope that you and your family are also continuing to keep well and safe, and that your new shop is doing well, too. I've been watching videos made by a Korean man who visits fish markets to buy fish, shellfish and seafood to eat, and have learned quite a bit. I hadn't realised that quite often the sashimi and other seafood is taken to a restaurant nearby where it is eaten: also that there are restaurants in Korea that have nothing similar here in the UK. I had been under the impression when watching your videos that you were preparing fish and seafood for people to take home to eat: I realise now that that may not be the case.
    Any way, I wish all the best for you and your family in the coming days, that you all remain healthy and prosperous!

      Since Korea has three seas, you can easily see seafood and fish anywhere you go. So, like my store, customers visit and buy the fish they want and take home to eat.
      Sometimes you can take it to a restaurant rather than a house and pay a small fee to eat out.
      I'm beginning to see hope that I can go back to my old leisure life with a little more patience.
      Please don't relax until it's completely over. Always take care of your health.

      머리쪽에 잔가시 3~4정도? 있는데
      그것만 제거해주셔도 됩니다.

    혹시 양식 참숭어를 개인적으로 도매가로 구입해서 오로시할수있는 판로가 있을까요? 노량진 경매장에 가도 서해안 뻘냄새나는 자연산 참숭어밖에 안보여서..
