Everyone forgets the sesame seeds on top of the bread for some reason… I’m 32, worked there when I was 16 in texas. So many options and I got mine double toasted and dip it in hot sauce! Also either cracked black pepper chips, salt n vinegar, or jalapeño! I miss it so much and they don’t have this deli where I live now so I would have to travel to Ohio or Texas again. I learned how they make them and can make homemade ones now it’s that good! Thank you for sharing no one ever says anything negative about this place ever!!!!
That is awesome Gal. I manage the one off a little Road and I 20 in Arlington around 85 to 87. Most of my staff was from Martin high school. It was a great job. I’m glad you learned how to make them because we love them too.

In my hometown, Irving, Texas, I remember when the first Shlotzsky’s opened in the 70’s (I’m 64). Only had the original with the sizes tacked up on the wall behind the cash register. Not many Lays chip varieties to choose from on a rack by the counter. The original is still my favorite and I don’t live near one now. I’ll try your recipe.. it looks so good!

I grew up with this sandwich 40 years ago so love your recipe, but what is the black olive mixture? Just diced black olives? Also, I have no idea where to get the signature bread. I worked at Schlotzsky in high school 35 years ago...we never made our bread at our store in Irving, Texas and I hated making the olives because they were never dry enough...that 1/8" ring of garlic butter and the same for the mustard...I did LOVE the philly 😁👍🏻

I remember the first brand new Schlotzskys erected in Lubbock 40 some years ago - was a Red Raider working on campus but lived off campus. OH my goodness, that sourdough bun was love at first bite! It was hardy, fresh, with the best flavor, reminiscent of ranch chuckwagon/bunkhouse bread prepared back home. It was a real treat to go out for a sandwich back then...but when they offered a student discount my pick was either Stubbs Bbq (his original hole-in-the-wall, off Avenue A) or Schlotzskys on Slide Rd near apartments. IMO restaurant food quality mattered more back then, compared to what (?) is being dished out nowadays. Thank you much, Jill, for sharing this favorite how to!! ❤❤❤

I grew up in the Austin area. We were a large family and Schlotsky’s was a rare treat because of the expense. My dad made up a copycat Schlotsky’s recipe and it is a cherished childhood memory of mine!
That old Schlotzsky's was down there on Mesquite Street in Downtown Arlington I remember it well the first Schlotzsky's I ever ate it and I've been eating them ever since
Oh yes the Mesquite Street I think was the first one in Arlington and then the park row was the second one. I believe the little road where I managed around 83 84 and 85 What’s the third store in Arlington. At that time they were privately owned franchises but I believe that Schlotzsky’s went back and bought all the privately owned ones and brought them back under the Schlotzsky’s umbrella corporate in Austin

Much respect! this is the closest ingredients to the official. but let me help with what I remember from 20 years ago when they just started their pizzas! the top bun gets garlic spread, mozzarella and a swirl of mustard. the bottom bun gets chopped black olives and covered in cheddar. then into the oven. the meats are on foil cooked next to the to bread halves. when its melted/done you place the piping hot meats (2 slices of black forrest ham, to every 1 slice Genoa Salami & 4 sm slices of cotto salami) on the bread. ham on bottom, salami on top. then lettuce tomato and onion. close and cut. the trick is to toast the bread and the meats separate it melts the cheese and lets the garlic spread melt. the bread is made daily but I can't recall putting a sourdough starter in... so I think it's not real sourdough.
Where is the Amish store you went to? Only one I can think of is down around Waco. Please share as I have been looking for one close by. I mentioned this before but I am west of Venus so were neighbors.
