You need to use a bit less flour or a bit more milk. The Schlotzsky’s dough is more a thick batter. I worked at the number one highest grossing store in the entire Schlotzsky chain in the late 70’s and early 80’s. Don’t forget the sesame seeds.
A bit less flour or more milk will not make it more thick?? More sticky.I’ve been making this for years and is always perfect.. i may try adding 1/4 cup more milk.. you are the second person to say this lol.. so i will try it next time..👍
......I always remembered that there were sesame seeds also . And , I seem to recall that there was an amount of sesame seed flour in the mix as well .
NICE! I grew up in Texas, and Schlotsky's was one of my favorites! I'm transplanted to Michigan, and Schlotsky's left the state about 20 years ago. Thank you for sharing! 💜
Absolutely awesome Kevin, thank you for sharing. I lived in Texas for the better part of 14 years and Schlotsky's was my absolute favorite. I had to move back home to NJ to take care of my brother about 10 years ago and had to leave my beloved sandwich behind. Thanks to you I can finally recreate it. BTW, this whole vid got me a lil teary eyed, you and your wife remind me so much of my best friend's mom and dad who took this yankee boy in and made me part of their family, RIP James and Diane.
I really just want to thank you for attempting to make the sandwich! When I was a kid we would save up two weeks worth of allowance just split to the sandwich with my sister.
Sandwiches are my favorite food. Schlotzkys is one of my favorite sandwich places. I am definitely going to try this. You both seem like awesome, down to earth people and you just got a new subscriber. Keep putting out these videos. Nothing but good wishes for your channel.
They always use garlic butter with cheddar and black olives.toasted and then the rest.❤ But I'm homesick for an original. I might have to try it. Thanks Buddy 😁
your ingredients are a bit off. but to help... the top bun gets garlic spread, mozzarella and a swirl of mustard. the bottom bun gets chopped black olives and covered in cheddar. then into the oven. the meats are on foil cooked next to the to bread halves. when its melted/done you place the piping hot meats (2 slices of ham, to every 1 slice Genoa Salami & 4 sm slices of cotto salami) on the bread. ham on bottom, salami on top. then lettuce tomato and onion. close and cut. the trick is to toast the bread and the meats separate it melts the cheese and lets the garlic spread melt.
You are welcome.. I hope you enjoy it.. Remember if you don’t want such a big sandwich you can cut the dough in half and put them in smaller pans and get two different sandwiches 🤠 This big one makes 4 servings if you load it up as i do 👍
@@kevinskitchen5826 i gotcha. That recipe is awesome. I has a 50 lb bag of shylotski bread mix from a local food bank and i needed to make something different. Thanks
It’s a GE top and bottom oven.. no drawer at the bottom.. I love it.. when they came out, i had to have one.. I don’t have room for a double oven in my kitchen.
I adore the Cheese Original and miss it from the menu. I think Schlotzky’s teaches management how to make one for customers, but you’re not getting your money’s worth. If you skip the meats, the amounts of cheese must be much more! And it tastes better if you skip the mustard.
No I don’t believe so.. the bigger, like Oscar Mayer is more of a genoa.. the hard salami is usually smaller round and dryer.. it has more protein so it’s dryer and harder.. Genoa is usually softer and bigger around.. thanks for the comment 🤠❤️
@@kevinskitchen5826 okay, thank you Kevin I made a loaf last night using a best guess on the flour and it turned out really good. Love the cornmeal flakes on the bottom. 🤗 thanks for the video!
I am not sure.. everything depends on how much ingredients you use.. but I will make a couple of sandwiches for 2 or 3 days.. the video is more for the bread, which costs very little to make.
I’ve worked at schlotzskys for about 5 years. That looks damn near identical to our bread. Amazing our owner refuses to sell bread. You prove our bread isn’t that special
Nice video. Kevin!! My name is Tom , ... I just did a copy cat version of Schlotsky’s too! It looks like we have very similar channels! And exactly the same amount of subscribers. Maybe we can do some collaboration videos via zoom or something. Leave a reply and maybe we can work together on a few videos and help each others channel !
You did something wrong I believe. there is not enough liquid. You should be able to almost pour in the dough. It's just a basic Focaccia actually. Amusing kitchen entertainment.
I won’t subscribe because I just don’t relate to the “comin’ atcha live, Kevin’s Kitchen” and comments like that, but I sure appreciate the recipe. I know you’re good folks & hope you find your own niche of YT supporters.
i can understand why only 71 subs. all the shit in the middle should be on top. and there should not be that much "meat". dont call this a copycat. and nothing went to the edge.

NIce work - I love onion but that's a ton lol ..

I do do it separate just not separated lol and I did not know it had mozzarella I will look into that❤️
Britney Spears favorite sandwhich is from Schlotskys.. This looks delicious I'm going to try that this weekend. Thank you for sharing.❤

This big one makes 4 servings if you load it up as i do 👍
So I started separating the dough into 4 small 6 inch pans and it comes out the same thickness as the real thing :-)
Hair and beard net and I could really start liking Kevin kitchen
It’s just my personal kitchen, so i only cook for my family.. which there is no need for them 😂😂

The bread is similiar to the mufaletta bread
Other people have said that.. Mabe that’s where the original came from? 🤠
Cool video. So is hard salami Genoa salami? My walmart seems to just have genoa and hard salami in the deli so I've been confused.
No I don’t believe so.. the bigger, like Oscar Mayer is more of a genoa.. the hard salami is usually smaller round and dryer.. it has more protein so it’s dryer and harder.. Genoa is usually softer and bigger around.. thanks for the comment 🤠❤️
It’s cotto and Genoa salami
So a bit confused how much flour Is used , the cup you used to put the flour in was how big.
You use a total of 2 1/2 cups the cup I was using was one cup you add a little at a time until all 2 1/2 cups are in there❤️
@@kevinskitchen5826 okay, thank you Kevin I made a loaf last night using a best guess on the flour and it turned out really good. Love the cornmeal flakes on the bottom. 🤗 thanks for the video!
Awesome glad you figured it out..❤️
Put your plastic wrap in the freezer before using it. It works with you better.
Great idea. Thank You. 🤠

I sure wish they did sell/ship bread. Both Boise locations disappeared years ago.

3 hrs for a sub too long
Not if there is no Schlotsky’s within 3hours of your location!!
i can understand why only 71 subs. all the shit in the middle should be on top. and there should not be that much "meat". dont call this a copycat. and nothing went to the edge.
The bread is the copycat.. make the sandwich however you like…
Not even close to original
It’s pretty much identical just bigger 🤪
