    My mom and grandmother always made them I couldn’t find a great reciepe till now.

    I think you need to bake it once after the first time it's already lite brown 30 plus 40 seemed alot as mine are too dark

      Hi Leat, thanks for the question!
      For the first cook, depending on how thin you made them, then for sure lower to 20 min (or until they are light brown).
      Did you lower the heat to 220F for the next 40 min? This is to dry them out, not to cook more.

    They look amazing. I ordered Mahleb online, can't wait to make them. After turning the oven off, do you leave the door slightly open?

      You won’t regret it at all!!
      If you have a convection oven you’re good. I don’t open the window so the residual heat dries everything in there, making it delicious and crunchy.

      Finally I found a reliable caak recipe!! I tried the one in the Deal cookbook and it was way too salty. Another recipe was too oily. This is the cracker, not the cookie version, correct? I want to make sure since your recipe calls for 2 teaspoons of sugar.

      Great question! Absolutely you can. But don’t leave more than 1-2 hours as they become VEEEERRRYYY dry… unless you like that.
      But it’s best you turn the oven off and can leave them in there as it cools down
