    The magic is with the butter. If oil is used instead, the results will be different. Butter, unlike oil, contains compounds having ends that attract to water and ends that attract to fat. These compounds keep the egg and butter in close contact, creating a thick barrier between the egg and the pan.

    You can take it off the pan a bit earlier, the eggs will keep cooling after you remove them from the pan.

    You didn’t explicitly mention it, but it is really important to use a pot that vents the steam. If you don’t have one, don’t put the lid completely on. You don’t want the steam to soften the popcorn. One other thing I like to do with my popcorn is to add Flavacol. This is fine popcorn salt that adheres better to the kernels with some color and buttery flavor. It is kosher and pareve.

    How do you guard against parasites since it's not cooked? Is there something you look for when buying the salmon?

      No, so curing process kills bacteria and usually parasites too, but it’s always a risk as per cdc when not cooked.

      When you’re buying salmon, there’s a few things you should know. The first is anything that is Atlantic. Salmon is gonna be farm raised. No, unless it says organic, farm raises usually includes antibiotics. Now antibiotics will most likely kill parasites and bacteria however, healthwise it’s not the best for you. Then you have organic salmon which most likely is also farm raised, but you gotta be a little careful where you’re getting it from. If you’re getting it from Europe, where there’s certain organic certifications for fish then it’s a little bit better. Then there’s wild caught salmon Like Alaskan salmon, but that is usually a certain times of the year. For parasites, I’m not really sure and even as I mentioned the CDC recommends to cook through your fish as eating it raw always poses a risk. The CDC also recommends freezing the fish for I think one week to kill off any parasites and then defrosting it and using it again .

      @@greg5143 to ensure the elimination of parasites, it’s recommended to freeze the salmon at -4°F (-20°C) or below for at least seven days. This freezing process effectively kills parasites, making the fish safer for raw or lightly preserved preparations like gravlax or ceviche. (based on info online)

    What temp were you at for the wings? I am sure would like rotisserie wings but not keen on adding a second stage of grilling them.

      Well you don’t really need to grill them, just leave them longer, will crisp up :) In my smoker, I cook them at 350-425. In this video I did over live fire (hot coals)

    Way too much salt! Followed the recipe and found the final result overly salty, and that goes with everyone who tried them. I would suggest going with less salt and increase as needed.

    You need a lid, throw some cherry or apple wood on the edge of your coals cook at anything between 350 and 420 😉and the skin will get nice and crispy😊

    you can dehydrate chilli under natural sunlight, free of charge. That is the traditional farmer’s method to dry chilli. Dry chilli under sun light.
