    1 1/2 -2 pounds (24-32oz) cod, fresh or thawed from frozen
    3/4 cup all-purpose flour
    1 cup rice flour, plus more for dusting
    1 1/2 tsp baking powder
    1/2 tsp salt
    Salt and pepper
    330 ml pale lager beer
    Canola or peanut oil as needed
    -Cut cod into uniform pieces about 2-3 oz in size and pat dry with a paper towel.
    -Season with salt and pepper.
    -Whisk together flour, rice flour, baking powder and salt. Add 330 ml beer and whisk to combine until smooth.
    -Heat oil to 350°F.
    -Dust fish with extra rice flour and shake off the excess. Add several pieces of fish to the batter turning to coat evenly.
    -Add several battered pieces to the hot oil and cook for 4-5 minutes until golden and the fish is cooked.
    -Drain onto a paper-towel-lined plate/tray and keep warm in a low oven while you fry the remaining fish.
    -Serve with lemon and tartar sauce.
