Fall *finally* arrived in California with rainy weather today. And you know what's perfect on a cold and rainy day? POT ROAST! Hope you guys enjoy this slow cooker pot roast recipe. :) What other slow cooker or crock pot recipes are you interested in next? Any favorites? Let me know! xo - Lisa
Any soup ideas for the slow cooker or soups in general? I love your recipes! Thank you for the wonderful videos! Making your pumpkin overnight oats today and can’t wait for breakfast tomorrow!
*@Lisa I love you recipes because they are practical for the home cook and you explain well why you do what you do Thank you for sharing your experience!*
To give extra flavor, I sauté the onion and garlic right after I seared the meat. Then I deglaze the pan with the broth. I normally use homemade bone broth. This extra step gives SOOOO MUCH FLAVOR!!!
I'll be making this dish this weekend. My mom made this exact dish many many many times the same way you do it. I lost her in July after her 14 year cancer fight and it's just me and my father who's paralyzed in a hospital bed. Just wanted to say thank you for the sharing 🙏
Love this for every veggie available for the veggies late in my CSA & greenmarket, October thru March: parsnip, turnip, fingerling, shallot & certain beets.
This recipe was so tasty, everyone in my family raved about how flavorful and tender the meat was! I added the veggies to the bottom, I subbed green pepper for celery. I didn’t have wine so I used a 1/4 cup tomato sauce with a 1/2 cup diced tomatoes and a little extra broth. I used two onions one raw and one chopped, the other I caramelized in the pan after searing the meat. I put that on top of the roast with the tomato sauce ,then added the rosemary, thyme and bay leaves. I also added garlic powder, paprika and celery salt since I ran out of celery. This is bookmarked, it’s delicious!!
shall I ask for more slow cooker recipes with garbanzo beans, lentils and any other beans of your liking? I find them so comforty and hearty in the winter. And leaving them in the pot in the morning and finding such a goodie to eat when you come back home to warm you up in the evening is just marvelous.
Just made your recipe today and must say it was fabulous!! Had to smile when you were talking about meat marbling just reminded me of advice my mother has given me. Thank you for sharing it truly is appreciated.
Made this tonight and it was delicious. I consider myself a talented home cook, and this was the best crockpot pot roast I've ever had or made. It was not greasy at all and full a au jus. I decided to put this over mashed potatoes so I loaded the crockpot with carrots and celery. I was out of fresh herbs and used a sprinkle of dried rosemary and thyme. I used chicken stock instead of beef broth (as shown in video) and wine as indicated in recipe. I started late and cooked a 4.25lb roast on high for 5 hours and low for 2 , 1 extra would have been sufficient. The meat was melt in your mouth tender. OUTSTANDING! Just something about this combination was perfect perfect perfect.
Honestly, that chuck looks amazing. I'm on my first ever crockpot right now, which is simply minced beef, bacon, tomatoes and some veggies. This is without searing. I've already prepared my next pot, which is going to be a whole, well seared, cut up, chicken with root veggies, mustard and green lentils. WIsh me luck!
I have a lot of food allergies and Celiac's diease so I cannot eat in resturants and many recipes i am unable to make. I really really appreciate how many of yours contain whole foods and have substitutions :)
Found your channel and love it because it’s easy, you can print recipes right away or watch videos and you even explain in detail in recipes small little things, people not high tech like me not complicated at all and your recipes are easy , love , love it so I subscribed. Thanks❤️
I followed your recipe and was amazed at how WONDERFUL the pot roast turned out! Searing the meat and adding fresh herbs were the key. The meat was so tender. It was a huge hit with my entire family. There weren't ANY leftovers. Thank you for sharing your recipe.
Thank you for being my teacher.....I'm trying to learn how to cook food that my family and friends will enjoy....I'm cooking a pot roast based on your video tomorrow.....(your instruction is very succinct, and I look forward to learning more from you)
Made this today! Thanks for another great recipe! You are my go to recipe resource, I know I can always trust the quality, it's usually easy to make and you offer so many autoimmune-friendly options.
Happy to hear you enjoyed this pot roast Aleksandra, and that I can help in any way I can when it comes to delicious gluten-free cooking 😊 If you ever have any requests, please let me know as well!
Yes! Thank you for this video! One of my biggest problems that hold me back from making a pot roast is what type of meat and how to cook it because for some reason I never been good at cooking beef (except for ground beef of course, which I have used a lot!). The only thing now is I don’t have a cast iron skillet so what can I use instead? I have a stainless steel and a “nonstick”.
Just found your channel a few days ago Lisa. You are a great resource for reasonable healthy meals/alternatives. You material is well thought out and your presentation is easy to understand. Your easy going and friendly personality makes for an entertaining and pleasant watch. Thank you and keep up the great work. I’m gonna try your cauliflower soup tonight and look forward to other recipes.
See, this is why I love my Cuisinart 4-in-1 slow cooker -- it allows me to sear, brown and saute ingredients in the same pot as I will slow-cook the final recipe in. I love not having to use separate pans and end up with oily splatter all over my stove.
I love your recipes because are amazing. My partner and I we enjoy watch then and later we have a competition to see which one cooks more healthy. I from Canary Islands, Spain and I Iike eat special if healthy and homemade. Living in uk few years now I discover the slow cooker that is amazing device together with the pressure cooker that you can programme. In uk with the busy life and easy to find ready meal. No many people have time or energy to cook but watching your videos help me to find new ideas in my weekly menu. Thank you for your videos.
Hi there! I know this is a culinary channel, however, I’ve always been curious to know your skincare (morning&night) routine because you have great skin! Not sure if you’re able to make a video on that, please.
Your so right!!we have fall here in Cali-out of all the days I ask for rain,it will rain tomorrow when we're at Disneyland!!but making this before we leave will be amazingly delicious at night and smell sooo good!!I love crockpot meals thanx for sharing 💖
Hi Lisa! Greetings from San Diego! I just discovered your wonderful channel. Thank you so much for this tutorial and recipe! I'm not a cook and I'm using my Crock Pot for the first time. We will follow your recipe and instructions for our Thanksgiving pot roast. God bless you and Happy Thanksgiving! 🦃 😊 🌴
Although my grandmother wasn't a very cook, we had pot roast at her house quite often. There were no slow cookers back then, but this recipe looks like my past and family gatherings. Thanks for reminding me of a wonderful choice for dinner very soon.
Great recipe. Followed every step. Added two items. About 14 baby Portabella mushrooms sliced and lightly saute' in olive oil, parsley and garlic, which I added to the mix as well as degalzing the pan. Also added a can of low fat cream of mushroom soup which I added to the beef broth and red wine in a large bowl and mixed well before pouring over the ingredients in the slow cooker. A great cool weather dinner.
I make this regularly. It’s a hit! And I can morph the leftovers into other dishes during the week. I add the herbs to the skillet when I deglaze the pan with wine and add the beef broth. Then pour into the crockpot. Yum!
Great idea on deglazing the pan 😊 And yes, so many ways to eat this pot roast over the week - which I have a few options written in the blog post as well.
I cooked a Chuck Roast in the oven a few days ago. It was so tough that some areas couldn't even be sliced with a sharp knife. As you can imagine, chewing it was impossible. After this disaster dinner, watching you prepare that Roast on a platter for serving brought tears to my eyes! 😢 I'm gonna dry my eyes and go buy another Chuck Roast, but THIS Time, I'll be using the Crock Pot! 😉
Just popped it in the crockpot and can’t wait to see how it turns out! We are having an especially spectacular Fall in Colorado, and today is crisp and rainy. 🎃
This was really good. I did 3+ lbs of chuck roast (and forgot just the bay leaves) from the recipe. My husband, FIL and I really enjoyed it. Thank you for sharing your recipe! I will use it again.
Looks amazing. Never thought of adding wine. On the list to make now that the rains are here to stay in Wetern Washington. Spelled it wrong on purpose. ;)
I was looking for a crock pot pot roast recipe and definitely found it here!!! Absolutely delicious and it will stay on my recipe rotation!!! Thank you!!
I'll definitely give this one a try, especially with the fresh herbs! My grandma used to add a few corn cobs to her pot roast. We would all end up arguing about who would get them!
I love the comment on the oil splatters! I make them all the time and my wife hates them (but I do try and wipe them up!). Thinking of trying this tomorrow during our atmospheric river that will be arriving in CA! Thanks for another amazing recipe Lisa! This will be perfect this fall!
Yes you have great narration and just easy way to make this roast just wonderful ! I didn’t sears mine! I just seasoned cut onion’s potatoes we’re still celebrating St Patty’s day cause I’m a Patty lol! We did corned beef one year in crockpot but it’s something with cooking a nice beef roast! OMG! Also added some cabbage soo I can’t wait to indulge! Oh btw I’m using the same crockpot I do still have the little round one but they all do the job plug it in and let go! Lol thanks!
I also HIGHLY recommend getting a meat tenderizer to flatten it out more so it cooks easier. I also like to pack the potatoes at the sides in the liquid face down so you get more flavor in them.
How do you prevent the Rosemary from leaving a bitter taste? I’ve read to add it toward the end, which I’ve done and it helped but love you’re able to have it in the whole time without issue!

You could add some quince jam after cooking.
To give extra flavor, I sauté the onion and garlic right after I seared the meat. Then I deglaze the pan with the broth. I normally use homemade bone broth. This extra step gives SOOOO MUCH FLAVOR!!!
Yep, you can definitely do that as well 😊

I'll be making this dish this weekend. My mom made this exact dish many many many times the same way you do it. I lost her in July after her 14 year cancer fight and it's just me and my father who's paralyzed in a hospital bed.

I am so sorry to hear about your loss. I hope this pot roast brings back beautiful memories ❤️
My mom used to cut little slits in the roast and stick slivers of garlic in it. It was delicious
Don't use the the wine, thyme or the bay leaf.
My mother did as well 😅
Great video I just bought a slow cooker today. I appreciate how you get to the point without the mumbo jumbo.

A fine simple presentation of an American classic presented by a very pleasant presenter. Most excellent.
Made this Tuesday and had it for supper 4 nights. Very good and love how the house smells. ❤️
I heard the instructions wrong. I opened the wine, poured it into the crockpot, then enjoyed the rest. It’s 2PM and I’m drunk.

It's an extra step but braising the meat first and adding all those bits into the crockpot is 😋she is the best👍😍
I couldn't agree more! It really adds to the flavor and texture of the meat.
