What Makes This Tangerine Cake Recipe a Game-Changer for Yummy Treats?

- Here is a delicious tangerine cake for you! 🍊 I was inspired by those lemon cakes made in a blender that I saw on social media, but this time, I made an easy-peasy cake that surprises with its taste and texture! 🎂 And you don't even need an oven for this one!
Tangerine Cake
3 eggs
230 g granulated sugar, 1 cup
90 ml olive oil, ⅖ cup
50 ml milk, ⅕ cup
4 tangerines, 600 g, add 1 small if yours smaller
300 g flour, 2 + ⅖ cups
1 sachet baking powder, 10 g
½ vanilla pod, scrape the seeds
2 handful pistachios, 50 gr
2 pinches of black pepper
1 teaspoon butter
*Zest the tangerines. Be careful not to zest white parts. White parts cause bitterness.
*Add the eggs and sugar in a food processor and beat around until you get a light, fluffy mixture.
*Add 2 of the peeled tangerines to the food processor and pulse.
*Add the milk and olive oil to the mixture and mix well. Then, put the flour, baking powder, and vanilla seeds. Mix until just combined.
*Spread butter on the bottom of the pan. Cut 1 tangerine into segments and 1 tangerine crosswise and place them all in the pan. Add one more tangerine to fill the pan if necessary.
*Pour the cake batter. First cook on high heat for 2-3 minutes, then close the lid and cook on a medium burner, on low heat for 10 minutes. Then transfer on the largest burner and again on medium heat. Cook the sides of the pan for another 10 to 15 minutes. This way the cake can cook evenly. Flip with a flat lid and cook for another 2-3 minutes. To check if the cake is done, insert a knife or toothpick. If it comes out clean, the cake is ready. You can bake in an oven as well, at 180 C (350 F) for 40-45 minutes.

In Turkey, we also have green tangerines during these times of the year before winter. It is little different than classic orange ones 🍊 and tastes amazing.

Ive always (30+ years) made my orange cake by the 'drop it all in the blender' method. Sometimes add poppy seeds, Sometimes not. Not noticeably bitter
Hello from Venezuela. Our season for tangerine begins on December, but you can really can find them all year long. But ours has not green skin but orange. Sometimes you can find greenish but smaller and less sweeter.

Turkish lemons seem to be more savory than lemons in America. I don't know why they are different - maybe they are a different branch of the lemon family tree. That may be why the social media recipe did not work as well. I always look forward to the beginning of mandalina season in Türkiye as the tart taste of the green ones is so refreshing.

If you boil the lemon (or orange) first, the pith is not bitter. That is how you make Torta de Santiago.

Was that a Refikadan paring knife used to test the cake doneness?!? If so, is there somewhere where might I buy one? Didn't see any on Amazon or Etsy. I purchased both the chef and serrated knives last year and absolutely love them. It would be awesome to have a paring knife to round out my set.

I have never seen/heard of a green tangerine. I’m from USA. I’ve only ever seen/tasted orange. I wonder if green tangerines would be available in a middle eastern grocery store? What name would I look for? Could I confuse them for something else?
they are not different from the orange ones. may be a little bit more bitter or sour. they are green at the beginning of the season. than they will become more orange and more sweety.
What about the seeds? Do you need to remove them first?
in Turkey tangerines mostly have no seeds.

Yes, that makes us eat slower. You can choose seedles tangerines as well or take out the seeds but this can wet the cake

I love using the whole lemon.
I slice them with the skin, pith, seeds and juice and put them in my morning green juice.
That’s also where most the Vit C is.
Somehow the pith doesn’t make my juice bitter though.
