    What a tremendous contribution you are making to our world. Thanks! I just started cooking sorghum and now will try millet. I am now whole food plant based. Wish I had started years ago. I’ll never go back to the western diet. I feel so much better.

    I tried making Millet roti and bhakhri and they came out so awesome.

    Hello madam, it is very-2 interesting teaching ,👍👍Since childhood we have been eating millet whatever it is grown in our native place.. beautiful Meghalaya, but my mother cooked millet in a very simple way for breakfast. But now I learnt many different recipes of making millet. I tried making chapatis out of ragi millet and it came out lovely, fluffy and soft , everyone liked it at home. In our place too different varieties of millet are grown but not in large scale , only for family consumption. Once again big thanks to madam and expecting more videos about locally available vegetables, lentils, grain etc

    Hello mam, how to cook these small grains by draining method( like removing extra water after the grains are cooked)

      Namaskaram Manjula. To start with,you could buy Ragi flour. Try porridge,halwa,roti etc. Ragi porridge,Ragi roti,Ragi puttu, Ragi sweet kozhakattai recipes, using ragi flour have been uploaded on Munch and Mull.
      Kodo millet and Foxtail Millet whole are small grained millets,which you can use to make pulav,curd rice ,bissibelle baath, pongal etc.

      Namaste. Generally it is advised to use millet flour without mixing. But I do tend to make multimillet dosas etc. While making rotis, best to use single millet flour.       Generally one millet flour to one water works. Boil water,add salt and teaspoon of salt. Switch of gas. Add flour. Mix with ladle. When warm, knead with hand and then roll into chapattis. Regards Sujata from Munch and Mull 😊🙏

      I soak millets, when I make Idli dosa batter. Small grained millets like kodo etc,can be roasted and used to reduce phytate content that reduces absorption. Regards Sujata from Munch and Mull 🙏😊

      Namaskaram. Yes, it will. It's better to roast on low heat than high flame. Basically roasting helps to remove any residual moisture and helps increase shelf life of the powder. 😊😊🙏🙏.     Im new to millets and recently bought non hulled foxtail millets from my local grocery store in Malaysia. But after watching some videos i understand that the non hulled millets not fit for human consumption. What do i do?

      Namaskaram. Generally major millets like Ragi,sorghum, Pearl millet do not have hull.
      Minor millets like kodo , barnyard, foxtail, little millet have hull which needs to be removed before cooking.
      If you have bought a small quantity of nonhulled millet,you could consider it using as a bird 🐦 feed. You could scatter them in an open green area,where birds could peck at them and satisfy their hunger.
      This way the millets will not be wasted. But in general in grocery stores, hulled millets only will be sold. So you could try soaking a small quantity of millet for about six hours in water and then grinding it for dosa batter.
      These are my suggestions.

      Namaskaram. Glad to know that you too belong to the Naval fraternity.😊😊🙏🙏. Yes,you can start using millets twice a week. Millets like kodo,barnyard and little millet are small grained and can be easily cooked like rice. A mix of brown rice and millets in a week.is a healthy combination. It's best to avoid white rice. So start gradually including millets,in small quantities as system takes time to adapt. But it does gradually adapt. The high fibre of brown rice and millets make our gut healthy.

    Good information about Millets! But i like to mention a few points.
    It's important to soak all whole millets and lentils overnight or for 6-8 hours -- millets must be washed well till water is clear, both before and after soaking and cook the soaked and washed millets using fresh water,. Soaking for 6-8 hours gets rid of the toxins like phytic acid, which is an antinutrient that prevents absorption of vitamins and minerals and can cause digestive problems like gas, boating, etc. The millet flours must be roasted at low heat before cooking, as phytic acid is heat sensitive!
    Best not to mix more than one type of millet at any meal or have more than one meal with millet in a day, due to its high fiber content, too much of which can exacerbate the digestive issues like gas, bloating, pain, constipation or diarrhoea in some people! Millet is blessing for people with 'Gluten intolerance' and people with diabetes or obesity due to its low glycaemic index!
    I agree that 'Kodo millet' is the best for Idli and Dosa!
    Best not to refer Malayalees as 'Malloos', as its quite offensive to most!

    Though millets are good for health ,they are not for purse. Moreover when they need less water why farmers are not going for cultivating them. If production is more 5hen price will drop know.

      Namaste. It's a misconception that millet is expensive. When there is demand, farmers have an incentive for growing. There is demand for food ordered from outside,so swiggy, Zomato growing. The same correlation can be made here. People have become used to white polished rice and so , demand needs to be created from the consumer side for brown rice,millets in lieu f better health. In general people don't think twice while spending on jewellery, clothing etc, but expect cheap food. The existing reality of today.😀😀🙏🙏.

    Experts in the field said the millets have to be soaked in water for a minimum of 8 hours before cooking because of the high fibre content in them from 7 to 14 % of fibre, which is contradictory to your method of cooking no offense intended. The big question is how to use the millet flour because soaking the flour is not possible and when cooked could be detrimental and cause health issues.

      You do not need to soak flour just kneed the flour and let it rest for some 6 to 8 hours. If not that long rest it at least 4 hours
