Hi Benkagreek, I store them in the fridge. They do sweat a little, but that disappears after half an hour at room temperature. If your fondant starts running though I would recommend keeping your fondant cake in an airtight cake box and in the fridge so the condensation doesn't get to it. This will help heaps. If you can't find a cake box that is airtight, pop the cake into a regular cake box with a lid and just wrap up the outside of the box in 2 layers of gladwrap :) this usually does the trick.
Ohh I feel you. I usually tint half of the portion I need and then I kneed it into the mass / whole fondant that I am using. If it is tough, I like to zap my fondant in the microwave for no longer than 5 seconds at a time (it does dry out the fondant a little so you may need to add in a little bit of Crisco shortening to compensate for this :) But it basically softens out the fondant which is kinder on your joints :)
