I read questions on here and you seem to answer so many....one being the difference between fondant and gum paste. The lady that owns the cake supply shop I used to go to told me that fondant and gum paste are the same and as a newbie I believed her. I see here that you explain that there is a difference. I don't understand why some people don't like sharing tips and tricks of the trade as you so willingly do. I can tell that many of your subscribers appreciate everything you share and demonstrate so....I am making your channel my number 1 :))
Whoa.....those gold leaves took a cake that was beautiful and just pushed it over the top to perfection. I love the ruffled, frilly, delicate flowers and the pink and gold color scheme is one that I am obsessing over. Pink and Gold or pale peach and gold are both inspiring me this summer.

You can find one demonstration in this video though which has the demo half way through: th-cam.com/video/rKWBiyAUEBk/w-d-xo.html and you can just skip to 3:40 for the buttercream demo :) and the recipe is 500 grams butter, 900 grams to 1kg of icing sugar and 2 to 3 tablespoons of milk. hope that helps!
I found Rosie's channel just recently and am just loving her tutorials and her pieces of work. She certainly is an artist and I love her palette. I couldn't believe she took the time to answer a question of mine within 24hrs of posting it ....how's that for personalised attention!?

Love the thought of cream cheese frosting. Is it as sturdy as buttercream? Meaning, does it have to be refrigerated after you decorate the cake? Buttercream crusts nicely and can sit on the counter for days.

When mixed with butter I find that cream cheese frosting is pretty study to frost a cake with and also crusts :) but being cream cheese, I still like to refrigerate it in between decorating and after decorating. But like you said, buttercream is fine to stay outside, I'm just reluctant to leave cream cheese out of the fridge. They say there is enough icing sugar in the frosting to stabilise it and prevent nasties from forming, but still... cream cheese is cream cheese lol

En este caso es una cobertura de queso crema, manteca y azucar impalpable. Pero lo puedes hacer solo con manteca a temperatura ambiente y batiendo el azucar impalpable de apoco. Ella tambien una vez que cubre el pastel lo pone en el freezer unos 10-15minutos para que quede firme y sea mas manejable. Busca recetas de buttercream que es como se llama, mismo aca hay muchos videos en español. Espero te sirva 😀

Hi Cameo Clinton, in this cake I used the same recipe as in this video, which is the extra tall fresh rose cake: th-cam.com/video/4Iq68MasY0A/w-d-xo.html it's a different recipe to the mini fondant cake :) it's an egg free cake recipe.
Hi hun, they should be able to stay on the cake indefinitely, although the moisture from the fridge can be soaked up by the fondant. Popping them on before the event or popping the cake in a box with a lid and then into the fridge will reduce the chances of them melting / sweating.

Hi +Lipstick&Stilettoes, thank you! Just a personal preference, it makes them taste a little better if you were to eat them. fondant tastes much better than gumpaste but needs to added flexibility and stability from the gumpaste so the flowers shape well.
Hi +Jane Lim, gumpaste is slightly different, it is much sturdier and is generally used for sugar flowers and figurines. Fondant is great for covering cakes with, is softer, tastes better and doesn't dry as quickly as gumpaste.
Another beautiful cake! But I have a question . You said you use pre-mixes quite a lot, is there a formula for how much of the pre-mix you use for say a 7 inch cake or a 5 inch cake? I guess the same qiestion would apply if you are doing the cake batter from scratch.

Hi, I buy my fondant and gumpaste in store. the fondant is the Orchid brand which can be found at coles and woolworths and the gumpaste is by satin ice and can be found at cake decorating stores :)
