This is what I am going to do with the hunk of beef in my fridge. It is boneless beef blade, well aged. I will pressure cook instead so the ligaments and connective tissues becomes tender. I don't agree with "blanching out the impurities" and throwing away the blanching water. The froth is only not esthetically pleasing but it is part of the beef flavor. No one will notice the froth once it is cooked into the resulting sauce. It is like throwing away the essence and flavor of the beef. Thank you for sharing.

If you are truly a Filipino, you should know that in the Philippines adobo has many versions depending on the province. You have the adobong tagalog(?), adobong puti (I think in pampanga), adobong dilaw (Batangas), adobo sa gata, etc. There is the Pork adobo, Chicken adobo, Beef adobo, adobong kangkong, adobong sitaw, adobong kuhol, adobong palaka, adobong kambing, adobong ASO. Yes, I am not a Filipino but I did study and graduated in a culinary school in the Philippines and live with a Filipino family (internship in the kitchen hahaha). One thing for sure is that adobo usually has soy sauce, garlic, and vinegar. If it is adobong puti, gata or dilaw, the soy sauce is absent. In its place, salt or fish sauce is use to add the salty flavor.

Simply saying, adobo has a lot of versions depending on the culture. I love your videos, I have learned cooking styles that were not taught in culinary school. I also believe that watching different cooking videos will enhance my skills as a cook. Technically, anybody who graduated from a culinary school is called a CHEF. But way before culinary schools men in my family were the cooks. I do not like being called a chef simply because I know there is still a lot that I have to learn about cooking.
