I've made this alot over the years, actually had it 3 days ago and served with chicken piccata. I like it with egg pappardelle, lots of mushrooms, 2 sweet sausage and one hot sausage and I use onions. Never tried it with the mascarpone but it looks like I've got to try that now.
I’ve made this 3 times now. It’s been a total hit with family and friends. I’ve shared this video several times with friends wanting the recipe. For the life of me, I can’t understand why Italian restaurants don’t have this on the menu. It is truly one of my favorites.

Hello Vincenzo! I saw this recipe yesterday and immediately looked in my fridge. To my surprise, everything was in :) Today I cooked Pappardelle Boscaiola. I used Salsiccia and king oyster mushrooms, mascarpone and, for sure, pecorino. It was soooo delicious!!!!! I never heared of this dish but I will cook this again. My wife and my kids enjoyed it as well. Grazie mille from Austria to Australia
I had never heard of it either. I suppose the best way to describe it is Italian Stroganoff to someone who is not familiar with it. It was absolutely delicious though.

I made this recipe for dinner tonight. It was fantastic! It was also easy to follow the recipe from Vincenzo’s video. I had everything I needed except for the white wine, so I substituted water (as suggested). I will definitely make this again (with wine!). I purchased fresh fettuccine, but next time I am going to make my own pasta as well!

I just made this and I can’t believe how fast my sons gobbled it up! I used cream cheese instead of mascarpone and fussilli as I didn’t have any long pasta. A keeper recipe! 2 thumbs and toes up!

Back in the '80s and '90s my family would go to Frank's Italian restaurant here in Melbourne and I would always order the boscaiola. I hadn't seen it anywhere else or thought about it again until I saw this video. It's a shame that such a great dish isn't on restaurant menus these days, but thanks to you Vincenzo it's now on mine! Very nice recipe! I make a similar version, same ingredients but with Gorgonzola instead of Mozarella and adding an onion. Gorgonzola and Champignons are a perfect pairing! Give it a try
About 20 years ago ee lived in Italy - 5 1/2 years. This was one of my favorite "primi" to order in a restaurant. We just got back from 3 weeks in Italy. We could not find Boscaiola anywhere. We missed it!

I made this tonight and did a double batch because I knew it would be good. I was born in the 70s and I remember eating variations of this. It was really good. However, I think Italian cooking has gone a long way since this. Vincenzo! Please do a goose liver mouse. Had it in Milan and I can't stop thinking about it.
