    In Italy, Fettuccine Boscaiola were very popular in 1970. It was even served at weddings.

      I've made this alot over the years, actually had it 3 days ago and served with chicken piccata. I like it with egg pappardelle, lots of mushrooms, 2 sweet sausage and one hot sausage and I use onions. Never tried it with the mascarpone but it looks like I've got to try that now.

      Yes, please! That looks wonderful! Us, Americans keep putting mushrooms in the wrong pasta dishes. Teach us the right way to do that and we will cook it in our homes and go to Italy to try the authentic dish, cooked by a talented chef!

    I just made this and I can’t believe how fast my sons gobbled it up! I used cream cheese instead of mascarpone and fussilli as I didn’t have any long pasta. A keeper recipe! 2 thumbs and toes up!

    Hello Vincenzo!
    I saw this recipe yesterday and immediately looked in my fridge. To my surprise, everything was in :) Today I cooked Pappardelle Boscaiola. I used Salsiccia and king oyster mushrooms, mascarpone and, for sure, pecorino. It was soooo delicious!!!!! I never heared of this dish but I will cook this again. My wife and my kids enjoyed it as well.

      I had never heard of it either. I suppose the best way to describe it is Italian Stroganoff to someone who is not familiar with it. It was absolutely delicious though.

    I used to buy Fettuccine Boscaiola for lunch from a little Italian place in the Martin Place Train Station in Sydney. This was over 30 years ago. I have loved it since then but only have it now when I made it myself. I have never seen it in a restaurant. It is my favourite

    I’ve made this 3 times now. It’s been a total hit with family and friends. I’ve shared this video several times with friends wanting the recipe. For the life of me, I can’t understand why Italian restaurants don’t have this on the menu. It is truly one of my favorites.

      Well, to start off; it's not a pretty well known dish so restaurants would always opt for the famous ones like Carbonara and Spaghetti. A Dish like this is for those who really love to take advantage of the endless possibilities of cooking pasta. I'm glad your loves it. It is definitely one of our favorites too.

    I made this recipe for dinner tonight. It was fantastic! It was also easy to follow the recipe from Vincenzo’s video. I had everything I needed except for the white wine, so I substituted water (as suggested). I will definitely make this again (with wine!). I purchased fresh fettuccine, but next time I am going to make my own pasta as well!

    I made this tonight and did a double batch because I knew it would be good. I was born in the 70s and I remember eating variations of this. It was really good. However, I think Italian cooking has gone a long way since this. Vincenzo! Please do a goose liver mouse. Had it in Milan and I can't stop thinking about it.

    You said it didn’t have a traditional recipe. How about using more like a breakfast sausage and shaving some cured egg yolk over the top? Sage sausage and the richness of the yolk? Just a thought and looking for your thoughts Vincenzo?

    Hey vin can you name that item u said half of pecorino and half of parmigiano to use . norchina ricotta and peco right ?is it for carbonara ? And please tell me the difference of amatriciana and carbonara . I know the sauce differ but what about eggs and cheese

      Hey there! 🤗 the difference between Carbonara and Amatriciana, they are both delicious pasta dishes, but the sauces are quite different. Carbonara is made with eggs, pecorino, black pepper and guanciale, while Amatriciana is made with tomato sauce, guanciale, black pepper and onions. Hope that helps!     Looks very nice, will try this one day but maybe use Parmesan romano instead of Pecorino... Not a big fan or maybe use 50/50.
    Anyway, you eat pasta with a fork, is the right way not to use spoon and a fork and twist the pasta on the spoon ?

    I beleive that these type of dishes yes should be deinately in restaurants .... But.... Only the Italian cuisine restaurants, and i am saying this only to keep the italian dishes to standard according to their traditional way of cooking.... Example: Carbonara, you find it in many restaurants , but is it cooked properly?

    Making this tonight, might add a bit of pancetta to pump it up a little. Also no macarpone, using ricotta, it's what I have. I get the best results when I use "what I have".

    Thank you Vincenzo, a great recipe which I did not know before.
    I made my first run with mushrooms, porcini and morels, and instead of pecorino I took Parmigiano Reggiano. Very tasty!
