I just made this for 9 friends. First off, the sauce was spectacular. Best tomato sauce I've made. Second, it baked perfectly and people loved the "everything" casserole. That's really it, I really enjoyed making it. FYI it's still warm after a 1.5 hour rest.
If you put out a cook book that listed out steps and ingredients but also included a QR code or something to get to a video like this I'd absolutely buy that book. Your videos are the audio version of what cooking comically is text wise.

This is still my favorite of his videos. Such an ambitious and comfortable dish, made with that old TH-cam channel passion with all its rough edges. Always something I come back to.
This video is so magical to rewatch. All of his hopes and dreams laid out. He went so big in his second episode, and every time i rewatch, I think off all the videos, the trendings, the cameos on other channels, all of it. So happy for him. Andrew or Oliver, whatever he wants to be called, I will always be happy for him. His level of commitment is the reason this paid off.

Honestly, I think that if one were to just do pre-made pasta for the filling instead of making it piece by piece by hand for an entire sleepless night, this might actually be worth making; I'm sorely tempted to try it myself.
My mother and I made TWO Timpanos one holiday season - we made one with a wine-based sauce, and no peas, and one with a heavy tomato sauce, and added peas. The wine based one was very good, but I felt the wine was a touch overpowering. The tomato one had the flavors we wanted, and the peas added enough sweetness, plus more fun color. Seeing the looks on our guests' faces as we wheeled them out was WAY worth it.

What really annoys me when watching movies and tv shows is when a character expresses or says that the food is good pretty much half a second after it hits their tongue.
why should it annoy you? it happens to me...the texture , the aromatic amalgam of spices and the initial taste takes less than a second for me to appreciate..maybe i have sensitive nerves which i use to reverse engineer some secret recipes... im sorry you have delayed nerve transmission..

Started watching your videos with this one, I've watched it several times over the past six years and even though your video style changes over the years the quality of these first few videos doesn't lack and that is an amazing feat.
Because of this video, i invited my cousins and aunties over and made Timpano and it was my first time really cooking like this but it turned out great! I had a great time making it an a great time with my family xx
This was actually the first of many Binging with Babish videos I watched, and I personally like to think this got me into cooking just as much as my culinary arts class in highschool did. I remember like it was yesterday the joy I felt when watching this video for the very first time, it's amazing that it has been 6 years already! And now, as I watch it again I'm so surprised how far this channel has gone.
You staying up all night cooking sounds like me after 2 hours of driving alone. At one point in time, I had an 11- 13 hour delivery route for a local restaurant chain I worked at.
I'm peacefully letting my suggested auto-play run because I'm bored and tired and depressed. All of a sudden I'm smacked upside the head with this intro. I did not expect to start crying instantly upon hearing it; it doesn't matter that I've never seen Frasier. The song apparently still means something to me after all this time. Thanks, Andy, for making me realize you've been here for a real long time and through a lot with me, and making me cry over a song with lyrics about salad and eggs from a series I've never even watched. I'll never hear it the same again.
It's super weird seeing him without tattoos. They've become such a big part of his character over the years that I forgot he didn't always have them. The old kitchen compared to the current one is super cool to see too
I'm just starting back into these. Was so blown away by Big Night 15yrs ago I made something like this but in a curved bowl with pasta for the outside. I just did Thanksgiving Timpano w turkey, dressing, smashed potatoes, cheesy broccoli and cranberry (which ended up as the top layer.) All layered in a big spring-form pan. Secret to this, IMO, is well-lubricated sides so can slide out and not stick. I use butter. Thanks so much for your version! Happy Holidays.
Reading through your cook book now. Getting the background information of this episode made me want to rewatch it. Im so glad you found success with this series and never stopped. You have given me so much inspiration over the last few years Andrew. Heres to many more episodes of cooking wtih Babis.
I think in a later episode (i believe the every meat burrito?) he actually explains that before starting this series he was working in video media, so he basically started the series already with a professional understanding of cinematography and editing and with access to professional-grade equipment. Definitely not how most youtubers start off, but he really used it to his advantage.

Because of this video, i invited my cousins and aunties over and made Timpano and it was my first time really cooking like this but it turned out great! I had a great time making it an a great time with my family xx
This was actually the first of many Binging with Babish videos I watched, and I personally like to think this got me into cooking just as much as my culinary arts class in highschool did. So, from the bottom of my heart, thank you, Binging with Babish, for setting me on this path, and for leaving not a doubt in my mind that with just a little hard work and some creativity, any dish can become amazing.

I'm just starting back into these. Was so blown away by Big Night 15yrs ago I made something like this but in a curved bowl with pasta for the outside. I just did Thanksgiving Timpano w turkey, dressing, smashed potatoes, cheesy broccoli and cranberry (which ended up as the top layer.) All layered in a big spring-form pan. Secret to this, IMO, is well-lubricated sides so can slide out and not stick. I use butter. Thanks so much for your version! Happy Holidays.
Oh, forgot: gonna mandoline eggplant for top and sides next time out!
Watching the old episodes really showcases how much Babish improved his style and delivery. More professional and smooth in general.
I don't feel like his cooking skill went up too much though, because... When you're that high up, it's not very far to go!

This is... strangely high quality considering it's the second episode
I think in a later episode (i believe the every meat burrito?) he actually explains that before starting this series he was working in video media, so he basically started the series already with a professional understanding of cinematography and editing and with access to professional-grade equipment. Definitely not how most youtubers start off, but he really used it to his advantage.
Finally decided to go back and watch this episode. Love all of them honestly
