dude, in chef's world, different fish need a different technique. Also they need several tools each depends of what technique they're used. this vids show it needs 3 kind of knife, idk what food they will serve. But when u talk about japanese sushi which is need clean and small cut for a fish that weight up to 200 lbs, a single knife will ruins your meal.
Much better you have a table for fish cutting purposes..very nice to look up at clean..but salute to your skills for doing this cutting techniques very nice.
