Love sauerkraut! Never heard of collard kraut but it looks amazing. I found Anna's Fermented Homestead channel through Canuary and am continuing to find so many great channels because of that and now Fermented February. Loving it so much, especially how supportive all the channels are of each other. Thank you for sharing!

My husband enjoys greens, and we keep cabbage kraut in the fridge at all times, so I am certain this will be a winner! All I need are greens! I'm planning an assortment based upon what is available here in the north. So far, I've fermented three recipes this month, and they've all gone over well for a man who thinks potatoes are plenty! Thank you and your friend who suggested this idea!

What a fun idea! I like that you also spiced up your kraut with the jalapenos and garlic, only because I think we (me, lol) can get stuck in a rut when it comes to these things. That kraut is a pretty color with the darker greens, imho. Thanks for sharing! 😊
